Cake Mix Cookies IV

SO EASY yet SO GOOD! I used yellow cake & 1 cup milk chocolate chips! Don't overbake- just until they are getting crinkly on the top. Wait 2-3 minutes before removing from sheets. I took advice & stored in a ziploc baggie pretty soon after they cooled off a little. Great while warm & great the next day, too!

Chicken Tortilla Soup I

Another good soup recipe! I used a whole can of hominy (left out corn) just because I LOVE hominy!!! I had small red beans on hand, so used them instead of black. And 2 cans of regular chicken broth instead of the condensed plus water. A quick soup to throw together!

Awesome Slow Cooker Pot Roast

Very good. I used beef broth in place of the water. Also added garlic. It was still a tad bland, so you might want to add some red wine or more spice.

Peanut Butter Fudge IV

I'm not sure....I boiled for exactly 3 minutes on med-high & it was very hard to stir & get out of the pan. The top was raggedy- I pressed down on it with some Pam-sprayed wax paper. I guess my heat was too high or I boiled it too long. That said, everyone is eating it with no complaints- although it is somewhat crumbly. I guess next time I will lower the temp to med & maybe boil for less time.

Slow Cooker Chicken Taco Soup

Good & healthy, too! I had cans of 15 0z tomato sauce, so I just dumped the whole thing in. I used 1 can of reg. tomatoes in place of one Rotel & I'm glad I did- it was spicy enough! Used 4 T. taco seasoning out of my big Costco jar. Used 1 lb. of chicken breasts. Instead of shredding, I tore off pieces with my fingers & threw them back in! I think it's amazing how chicken done this way or shredded tastes so much better than chopped!

Orange Cream Fruit Salad

This, to me, is more like a dessert. I chopped the peaches & used a jar of maraschino cherries in place of the apple & banana. It's very good- my husband loved it. It would be great poured in a pie shell & maybe frozen!?!

Beth's Chocolate Chip Cookies

Ahh...chocolate chip cookies. They are like banana (nut) bread...lots of good recipes out there, but everyone has their own personal preference. I used trans-fat free Crisco because that's what I had. I also used mini-chips since I had those. The dough was TO DIE FOR!!! I could have been happy just eating it. (but I guess you're not supposed to) I halved the recipe so as not to gain TOO much weight! I'm not sure if this is my favorite recipe, but it is definitely in the top 3!!! A word of warning: you MUST watch these. My first batch got a little too brown after only 10 minutes. Check on them after 7 minutes just to be safe. Take them out when they still seem a little underdone. Enjoy!

Raspberry-Glazed Rosemary Chicken

Actually, 3 1/2 stars. If you choose to make this, be sure to crush the rosemary as fine as possible! Use more honey mustard & I would also recommend to use seedless jam. It's OK.

Cream Corn Like No Other

WOWEE!!! I used a pound of frozen corn- just run it under hot water in a colander for a minute. Make sure you use PLAIN corn....not sweet or with any added ingredients. I halved the rest of the ingredients. I simmered mine until it was pretty thick. (before adding the parm) Perfection. Thanks!

Pumpkin Chili Mexicana

Do you know how healthy this is? It has 5 of the top 16 foods in it!!! Beans, turkey, pumpkin, onions, & tomatoes! I used the full 1 1/4 lb of ground turkey breast. You might want to add water, as mine was really thick. (my canned tomatoes' juice was pretty thick- I added 1 cup of water to the chili) I also would suggest using 2 cans of kidney beans! It is mild, so if you want it hot, go ahead & add more kick. So easy & fun to make, too.

Outrageous Chocolate Chip Cookies

I just made these as written & they are WONDERFUL!!! My favorite part about this cookie is it's texture. Like others have said, they don't spread- which is a MUST in my book! 10 minutes is perfect. Be sure to mix the sugars, butter, PB, egg, & vanilla first- then add the flour mixed with the soda, salt, & oats. Lastly the ch chips. Amazing cookie- thanks so much for submitting!

Clarke Cheesecake Pie

Great- so similar to my Lemon Ice Box Pie recipe. (it has no cream cheese) I used a Nilla wafer pie shell- yummy! I recommend chilling overnight. Simple & everyone loves.

Hot Bean Dip

Love it! I used 1 t. dried cilantro instead of the parsley & reg. onion instead of green onions. (what I had on hand) I also halved the recipe since I was just making it for my family for football watching purposes. Speaking of football, WAY TO GO, LONGHORNS!!! We HOOKED 'EM!!! Baked French Toast

I saw the problem with this recipe...it needs to be cut in half. Only 8 oz of bread will fit in a 13x9. So this is what I did- & used real maple syrup instead of corn syrup. Turned out really well. Might want to bake around 30 minutes- might got a little too brown. No need for syrup on top, although I did sprinkle on a little powdered sugar over the top before serving. This will puff up, so cut all the ingredients in half & you will be fine! Oh- I used left-over egg nog in place of the half & half & used 1/4 t. nutmeg instead of cinnamon. Yum!

New Year's Day Black-Eyed Peas

Happy New Year! I borrowed from "2BCreative" by soaking overnight (a must in my opinion for dried beans), only using 4 cups of water, adding fresh garlic, & cooking for 1 1/2 hours. I used canned stewed tomatoes whirled in the blender. The result was a tad soupy, but we all had 2 bowls full! Served with my favorite cornbread recipe. I'm happy with this- it will be my standard New Year's recipe from now on!

Currant Jelly Wiener Sauce

Yummy!!! I used a 16oz jar of the jelly from Whole Foods- actually came to 1 1/2 cups. Be sure to drain your lil smokies before dumping them in! Cook at least 4 hours. A very popular dish.

Orange Pecan French Toast

WOW- was a hit for Christmas Eve brunch! I used real maple syrup instead of corn syrup & 3/8 cup of Egg Beaters for the egg whites. The pan was completely empty when I went back for seconds!!! P.S.- If you use one of the loaves from the twin pack of Pepperidge Farms french bread, it fills the 13x9 perfectly. Good texture, too.......

Chili Joe's for Kids

I used this because I had all these ingredients. I love making chili & trying new recipes. This is VERY easy & my husband absolutely loved it. He talked about it 3 different times! Yes, it is sweet because of the chili sauce, but it is very good. I only used 1 pound of beef- extra lean, of course! Thanks for submitting!
