Spiced Beef Stew

I adapted this recipe to make it even more low carb! I used Splenda instead of brown sugar, less onion, green beans only instead of mixed veggies, & Michelob Ultra. This is a yummy beefy stew with a thin but flavorful gravy! I did add a few grinds of pepper. Thanks, Corwynn!!!

Broiled Herb Butter Chicken

I didn't want butter splattered all over- so I baked instead. I put half the butter mixture over the chicken, covered with foil, & baked at 375 for 20 minutes. Then flipped them over & repeated. I did broil them for 5 minutes after that. I would recommend using salted butter- I used unsalted, & even though I added about a quarter teaspoon, it was still pretty bland. Smelled great while baking! A very low carb choice.

Cream Cheese Pie

OMG!!! Majorly good! Tastes like the original cream cheesecake by Sara Lee!!! I just used a Keebler crust. Make sure your eggs & cream cheese are at room temperature! I forgot to up the oven temp....no biggie. In fact, I might try not baking the sour cream layer next time. This is to die for. Thank you SO MUCH for this recipe!!!

Honey Mustard Sauce

I scaled this to 9 servings. Used 1 T. dijon & 1 T. regular mustard. I also added more mayo to make it a lighter yellow. It's great with coconut chicken strips from Central Market's deli case!!

Brown Sugar Banana Nut Bread I

Actually 4 1/2 stars! Very good! Moist, perfect texture. I baked for 50 minutes at 325 & it was perfect. The only reason I didn't give it a 5 is because there are a couple of BNB recipes I like a little better. But this one is truly really good!

Classic Bran Muffins

Very good! I used All Bran. (buds) You find this with all the other cereals. I left out the raisins & used the white whole wheat flour. To make sweeter & more moist, I subbed out the oil with 4 T. applesauce & 2 T. oil. It's true these don't rise well, but that's OK with me! Healthy, easy, & good!

Morton® Chocolate Ice Cream

WOW is right! I did use the cinnamon. (yum) I made it in an electric ice cream maker, but we couldn't wait any longer than 30 minutes! We ate it soft serve & it was great. I put the rest in a plastic container in the freezer, & the next day it was PERFECT!!! Looked like "real" ice cream! Love how it has no eggs in it. (gross) Thanks Morton!

Chocolate Chip Banana Bread II

Mmmmm.....another yummy banana bread! I used the trans-fat free Crisco & mini choc chips. Like others have said, very moist & perfect! I accidently switched the amounts of BS & BP, but it turned out just how I like it- the top was not severely rounded- kind of flat. I did halve the recipe & put the oven on 325. Took about 65 minutes. YUM YUM!!! (oh- also used the new white whole wheat flour to be healthier- works just fine!)

Banana Muffins II

Another 5 star review! I used the new white whole wheat flour- worked great! They slightly over-filled my cute little Bundt muffin/cupcake pan, so next time I won't fill quite so full & make a few minis as well. So easy & delicious with my perfectly ripened bananas! Thank you!

Tomato and Avocado Salad

Pretty tasty. I took reviewers' advice- halved dressing & used some red wine vinegar in place of some of the balsamic. It was still too much dressing. I also cut up the tomatoes (used 3 Romas) & avocado & put them in a bowl with the dressing. Next time I will reduce dressing even further! Thanks for the healthy recipe.

Baked Teriyaki Chicken

Delish! I looked in my pantry for cornstarch, & realized I was out- subbed flour & it worked fine! Being lazy, I just mixed the marinade & poured over my boneless, skinless breasts. I covered the dish for the first 10 minutes, then baked for 30 more minutes, turning the chicken over every 10 minutes. Came out with a perfect slightly thick glaze. Used a 375 oven & also subbed out 1/3 c. Splenda instead of sugar. Yum!

Montreal Peppered Steak

Really good & so easy. I halved the steak seasoning & it was perfect. Also subbed out half the soy sauce with Worchestershire per reviews. Marinated 2 hours. Steak sauce not necessary!
