Roasted New Potatoes

Reviewed: Mar. 17, 2007
These were really tasty! I had a 4 lb bag of assorted fingerling potatoes from Costco....they are SO cute! So I used half a bag & cut up some of the larger ones. Added 1/3 more of all the other ingredients to make up for the extra half lb of potatoes. Perfect cook time & temp. Yummy & easy- thanks!

Soft Chocolate Cookies

Reviewed: Mar. 16, 2007
WOW!!! Yummy cookies! I saw the tiny Andes mint chips at Target, so I added these as did some other reviewers. I left out the powdered sugar- partly out of laziness & partly because I only had unopened boxes in my pantry & didn't want to open one for a small amount! Anyway, I figured they didn't need it since I did add chips. My dough was in the fridge for several hours & was not sticky at all. A little hard, but not too much trouble to roll into balls. Cookies came out perfect after 9 minutes. Beautiful & delicious!!! Thanks so much!

Mel's Magnificent Chocolate Chip Cookies

Reviewed: Mar. 11, 2007
If you like flat, chewy cookies, these are for you. I mean, they are good, but I like a different texture. Yes, I used real unsalted butter. The dough is DEE-licious!!!

Sloppy Joe Sandwiches

OK- standard fare. I doubled the recipe & used lean ground beef as always. A good recipe utilizing common pantry staples. The best thing? No chopping!!!

Six Can Chicken Tortilla Soup

Reviewed: Mar. 5, 2007
Good, healthy, easy! I did add the 2 T. taco seasoning. Not a lot of broth- so if you want more, add more.

Asparagus and Water Chestnuts

Reviewed: Mar. 2, 2007
Pretty good stuff. Healthy, low fat, low carb, low cal. Cooked longer cause we don't like "crunchy" asparagus!

Butter Beef

Reviewed: Mar. 2, 2007
I made it as specified- & I didn't find it half bad! Not too salty or greasy, but I did use Laura's Lean Stew Meat. Cooked 8 hours on low. Used Whole Foods Buttery Sticks for the butter. (less sat fat) I think I will spice up the leftovers for shredded beef burritos!!!

Seasoned Turkey Burgers

Reviewed: Feb. 28, 2007
Actually 4 1/2. Pretty tasty! I was going to add some oats, like others, but forgot. I didn't add the egg, but stuck to the rest of the recipe. Not too salty, IMO! Definitely use a little lower temp. I used a non-stick grill with a lid to keep moisture in, as turkey breast tends to be a bit dry. My only gripe is that I have to mix it with my hands- yuck! (wouldn't mix well otherwise) Thanks!

Dill and Butter Squash

Reviewed: Feb. 25, 2007
My husband & I like this, but not my son. I reduced the butter to 3 T. & the dill to 1 t. This is good for low-carb.

Banana Crumb Muffins

Reviewed: Feb. 23, 2007
Yes, these are very good! I made 12 muffins. Lots of topping. They were done in 15 minutes. They fell apart a little when removing from the pan, but maybe you just need to let them cool more. I used the new white wheat flour & they were delicious!

Sugar N Spice Muffins

Reviewed: Feb. 4, 2007
Yummy! I love cloves- so this looked good to me. The crumb topping doesn't really brown, but not to worry! They ARE done in 20 minutes & are SO good. My little girl ate 2 & my husband ate 4!!! This is one of those perfect recipes with perfect directions. Thanks for submitting!

Super Bowl Salsa Dip

Reviewed: Feb. 4, 2007
Good stuff!!! I halved the recipe- but used the entire amount of sausage & beans. Also used slightly less than 1/2 c. milk. I would recommend using either 1/2 c. chopped onion OR the green onions- not both. Thanks for the recipe!

Low-Cal Chicken

Reviewed: Sep. 19, 2006
Wow- I can't believe how much we liked this! I figured it would be "OK." Really really tasty for something so low cal, low carb, & low fat!!! Baked for 45 minutes. I also thought the garlic would be too much, but it wasn't.

Tangy Broccoli

Reviewed: Aug. 21, 2006
My son, daughter, & I all loved this. My husband hated it, I didn't know he hates Dijon!!! Anyway, I just used a pound of frozen petite flowerets. Cooked in the micro, & proceeded from there. Used 4 T. light Cheese Whiz. Easy, good, & low carb!!

Quick Quiche

Reviewed: Aug. 21, 2006
Pretty good! I made a few low carb adjustments. 1/2 t. onion powder to replace the onion, 1/4 c. flour instead of 1/2, (worked just fine) & half cream & half water for the milk. I also used Fontina cheese since I had that. This could do with some more spices, & I think 1 t. salt is too much. I also used 8 T. real bacon bits in place of the bacon slices. Took 45-50 minutes to cook. A pretty quiche.

Blue Cheese Beef Tenderloin

Reviewed: Aug. 16, 2006
Wow- such an easy gourmet meal!! I used 4 tenderloin steaks & cooked them in my TOASTER OVEN!!! (works great) I should have halved the sauce. Take note- it takes at least 15 minutes for the cheese to melt. (I used Gorgonzola) Also- definitely marinate longer- I did for 2 hours & next time I will try at least 4. Thanks for the great recipe!

Normal Chicken

Not bad for something as ridiculously easy as this! I chose it for low carb...& used boneless, skinless breasts like always. I'm a big fan of both soy sauce & Woozy sauce!

Bacon Feta Beans

Reviewed: Aug. 11, 2006
Really good! I used bacon bits- using a little olive oil to saute' with. I had to cook the green beans 5 minutes in the microwave to thaw. Cooking it this way takes about 15 minutes total. A delicious, easy, low carb side dish!
