Firecracker Grilled Alaska Salmon

Sorry- I just like my other salmon recipes better. I baked this instead of grilling- if you try this, watch the red pepper if you are a wimp like me!

Paige's Feta Slaw

Oh, wow- yummy! Way better than I thought it would be! Kept everything the same except used 1 c. feta. (had a large container) 8 oz of cheese is usually 2 cups, but I feel the one cup is adequate. Don't expect the sweet, creamy style & I'll bet you'll love it, too! Great for low carb!

Pretty Chicken Marinade

Pretty good- but too salty. And YES I always use low sodium soy sauce! Maybe there is a lot of sodium in the liquid smoke- I'll check it out. I would also recommend halving the marinade ing. unless you are using a lot of chicken.

Favorite Nut Bread

First of all, the directions for this are off. The ingredient list has 1 cup of white sugar (total) & the directions only call for 2/3 cup total. I didn't know what to do, so I added 2/3 c. sugar to step 4 instead of 1/3. Well...I didn't have any- I made it for my mother-in-law for her birthday. She just called & said it was FABULOUS & to never lose the recipe! WOW. I baked it at 325 for 1 hour with foil on top the last 20-30 minutes. I can't wait to bake one for ME.....once I can have a "splurge" day!

Quick Chinese Chicken Salad

Pretty good stuff! My bag of salad was 10 oz- but I left the dressing amounts the same- maybe I shouldn't have! I used pre-cooked grilled chicken strips from Costco- very good. This has a strong soy flavor, but maybe because I didn't use enough salad! Definitely don't toss the salad with the dressing unless all will be eaten immediately. Otherwise, keep them separate to serve individually. This was good for my low carb diet.(used Splenda)

Rich and Creamy Tomato Basil Soup

I used this as a base for my own creation. I used: 1 28oz can crushed tomatoes, 1/2 stick butter, 1/2 c. cream,1 T. sugar, & 1 t. dried basil. (yeah, I'm lazy) Guess what? It was pretty darn good. I'm making it again this weekend....but it will be better since I went to Central Market & bought seedless tomato puree'!!! (the seeds were my only gripe...& being lazy, didn't feel like straining the canned crushed tomatoes!)

Teri Tips

I wanted to make this a low-carb entree. I didn't buy tenderloin- too many $....so meat not as tender. Will slice thinly next time instead of cubing. Used Splenda, red wine, & cooked the green onions along with it the last 5 minutes. Cooked in a saucepan on the stovetop....just dumped it all in the pan & added a little arrowroot mixed with water near the end to thicken & gloss up the sauce. (a Graham Kerr tip- LOVE him!!!) Really a good & easy recipe- thanks!

Indian Tomato Chicken

Good stuff- & pretty easy. Took the lazy way & just chopped the onions. Used 1 t. jarred mashed ginger (like garlic also comes) & 1 t. cinnamon. Used breasts & petite diced tomatoes. Also added 1/2 c. water after the first hour since it was pretty dry- & I kept it covered the whole time. At first, it seemed too spicy, but that was only the first bite. The chicken is moist & very flavorful- even after scraping off the tomato mixture for my 8 year old!! (who did eat it all, by the way!) I chose this for low carb. Thanks!

Baked Salmon Fillets Dijon

Another good recipe from Christine Johnson! My Dijon-hating husband loved this- hahaha!!! (he'll never know) Healthy & tasty. Check at 15 minutes- I did 20 & may have overcooked it some. If you carefully spoon your butter over the crumbs, it works. Oh- I also didn't measure the Dijon- just spooned a little on each fillet & spread thinly.

Peanut Butter Popcorn

Oh my- this isn't a low cal treat, is it? So what- yummy! I zapped the marshmallow mixture 4 minutes total, then added double the peanut butter & zapped one more minute. Did the recommended 30 minutes at 200 on 2 cookie sheets- let cool. Definitely do this- gets rid of the goo. Wonderful, easy. Thanks!

Double Quick Dinner Rolls

4 1/2 stars! I was afraid to just mix all those first few ingredients, so I stirred the yeast with warm water & the sugar first & let set for a few. Then proceeded. These are easy & good! I think I will use onion salt & garlic powder next time. One minor gripe is that the tops got a little too brown....so watch 'em! Might put foil on top the last 5-10 minutes. Thanks!

Strawberry Cobbler I

Eleanor, you have great recipes! I read all the reviews & made a few changes. I used 2 lbs. of berries, 1 c. sugar, 2 T. cornstarch, & 1 c. water. (this amount of berries is about 6 c. whole berries.) The result was still too watery & a tad sweet. (I guess my berries were sweet to begin with!) The dough I kept the same, but I had to add a lot of cream to get it to not be too stiff.) I think next time I will up the ratio of dough & use half & half. A 9x9 pan works great. The crust is yummy & I would like a little more! I would also slice the strawberries next time. YUM! I am so full right now!!!

Beef Nacho Casserole

We really liked this! However, I couldn't bring myself to put mayo in a "nacho" casserole....so I used SC. YUMMY! I used lower fat cheese.....which I WON'T do next time because it doesn't properly melt! An 8x8 pan is the perfect size. Thanks!

Banana-Nut Chip Bread

Hey Raymond!!! I live in Arlington, Texas, too! Loved this B-bread. I made it in my large size Bundt loaf pan. Temp- 325, although next time I will try 300. That way it won't get too brown on top, but will have to cook it longer. Love all the ingredients & the small amount of oil. I used 4 bananas since that was the amount turning brown on my counter! Used mini chips. Wonderful bread- thanks! from one Arlington-ite to another.
