Delicious! As with other reviewers, I added more garlic (we love it, so I added a lot to our taste). For the liquid, I ended up adding a total of 4 cups of chicken broth, a cup of veggie broth that I had and a cup of water and I replaced one cup of sauce for diced tomatoes undrained. Without the extra liquid, it would have been much more of a thick stew than a brothy soup. I also skipped the pasta and just had it as a tomato based vegetable soup. Oh, one last thing...I only added the spinach for the last 10 minutes of simmering. I think longer than that would have been too much for the delicate baby spinach leaves.
This recipe makes a LOT of soup. Be prepared to cut the recipe down or have lots of leftovers. I put some in the freezer for another day! :)
