Cilantro-Lime Dressing

This is my new favorite dressing! Tangy, sweet, spicy, perfect! Was excellent for everyday salad use, but I will definitely pull this recipe out again when I make taco salad next.

Maple-Balsamic Vinaigrette

The balsamic is definitely a strong flavor in this dressing, and I cut it some based on reviews. I will probably cut it a little more next time. Otherwise, still a very tasty dressing that I will make again!

Jamie's Minestrone

Delicious! As with other reviewers, I added more garlic (we love it, so I added a lot to our taste). For the liquid, I ended up adding a total of 4 cups of chicken broth, a cup of veggie broth that I had and a cup of water and I replaced one cup of sauce for diced tomatoes undrained. Without the extra liquid, it would have been much more of a thick stew than a brothy soup. I also skipped the pasta and just had it as a tomato based vegetable soup. Oh, one last thing...I only added the spinach for the last 10 minutes of simmering. I think longer than that would have been too much for the delicate baby spinach leaves. This recipe makes a LOT of soup. Be prepared to cut the recipe down or have lots of leftovers. I put some in the freezer for another day! :)

Bean Soup With Kale

I loved this soup! It was so very flavorful. I did use a can of diced tomatoes instead of fresh. I also used 2 cups veggie broth (I only had two cups left prepared) and 2 cans of chicken broth. This came out to an extra cup or so over what the recipe called for. Most importantly, heed the other recommendations, this needs to simmer much longer in order to have the kale tender enough. I simmered mine (covered to avoid too much evaporation) for almost 45 minutes.

Grandma's Slow Cooker Vegetarian Chili

This was delicious after I made changes as suggested by others and a few of my own. 1. I couldn’t find black bean soup anywhere, so I added a half a can of black beans rinsed. (I saved half for Vegetarian Quesadillas that I’m trying later in the week!) 2. I used diced tomatoes, since that is what I had at home. I would probably put a second can in next time. 3. Frozen instead of canned corn. 4. A lot more chili powder than it calls for and a little bit of cumin. 5. I also added 2 jalapeƱos for a little extra kick and two chili’s in adobo sauce because I had them leftover. 6. I cooked it on low for 6.5 hours.

Chicken and Gnocchi Soup

This soup was delicious. It was not quite as thick as I was expecting, but then again, I did not add the cornstarch mixture and I cooked the gnocchi separate as someone else suggested. Still very tasty and would definitely make it again.

Ohio Sausage and Kale Soup

I was too nervous to try this because I don't often cook with sausage and have never cooked with kale, but luckily my boyfriend is fearless in the kitchen. Not only was it so simple to make, but it was delicious. I couldn't wait until the next day to have leftovers. The bread in the bottom of the bowl absorbed all the delicious flavors too. We actually added some quinoa to it as well, to make it even more filling and add some extra protein. I would definitely be willing to try making this myself and have already passed the recipe on to friends and family as well as laminated it into my recipe book!

Garlic Carrots

These carrots are delicious and so easy to make. My mother cooks the same side dishes for every holiday and I got her to add this one to her list! (A feat of its own!) The only thing I would suggest is checking the tenderness of the carrots before removing from the pan. Thicker carrots will need more water to boil in.

Crispy Cucumbers and Tomatoes in Dill Dressing

Cool and refreshing, this is an excellent summer salad. I take it to every BBQ I go to now and people always rave. As other's have said, I use olive oil instead of vegetable (MUCH healthier). I also didn't have apple cider vinegar, so I used red wine vinegar. I would probably cut down a little on it next time as it is a little "puckery."

Salsa

This is an excellent salsa recipe. If you put it in the food processor, chop the onion by hand to avoid having it taste too onion-y from all of the juices. Also, one jalepeno is just not enough. It was less than mild. Last time I made it I used 3! Also, leaving it to sit in the fridge overnight really does let the flavors settle. The jalepeno gets milder from the tomatoes. I think that is why I needed so many to taste the kick!

Easy Vegetable Pot Pie

This was an easy recipe and just what I was looking for. I used a bag of mixed Italian veggies (thawed, of course) based on someone else's recommendation in the reviews. A little bit bland for my tastes though. Next time I would probably add some garlic or other spices.

Slow Cooker Cilantro Lime Chicken

This was one of the easiest and tastiest slow cooker recipes I have come across so far! I had chicken in the freezer, had bought fresh cilantro for another recipe and barely used any of it, had a lime on hand and had just whipped up some Taco Seasoning II (from this website). Plus I always have spare jars of salsa on hand. I used it as taco/burrito filling. Whole wheat tortillas with some shredded cheese and taco seasoned rice...delicious!

Shrimp Enchiladas

My boyfriend told me this is the best meal I've made to date! It truly was delicious. As with most other reviewers, we added some shredded cheese on top of the enchiladas right before they came out of the oven. I also made my own salsa, which seemed to be key to the tastiness of this recipe. This was also a very easy recipe to put together. I hate a lot of complicated steps, but this was a breeze! =-)
