Grandma's Slow Cooker Vegetarian Chili
This was delicious after I made changes as suggested by others and a few of my own. 1. I couldn’t find black bean soup anywhere, so I added a half a can of black beans rinsed. (I saved half for Vegetarian Quesadillas that I’m trying later in the week!) 2. I used diced tomatoes, since that is what I had at home. I would probably put a second can in next time. 3. Frozen instead of canned corn. 4. A lot more chili powder than it calls for and a little bit of cumin. 5. I also added 2 jalapeños for a little extra kick and two chili’s in adobo sauce because I had them leftover. 6. I cooked it on low for 6.5 hours.

Chicken and Gnocchi Soup
This soup was delicious. It was not quite as thick as I was expecting, but then again, I did not add the cornstarch mixture and I cooked the gnocchi separate as someone else suggested. Still very tasty and would definitely make it again.

Ohio Sausage and Kale Soup
I was too nervous to try this because I don't often cook with sausage and have never cooked with kale, but luckily my boyfriend is fearless in the kitchen. Not only was it so simple to make, but it was delicious. I couldn't wait until the next day to have leftovers. The bread in the bottom of the bowl absorbed all the delicious flavors too. We actually added some quinoa to it as well, to make it even more filling and add some extra protein. I would definitely be willing to try making this myself and have already passed the recipe on to friends and family as well as laminated it into my recipe book!
