Hard Taco Shells

Reviewed: Dec. 5, 2010
After reading a lot of the reviews I'm so impressed at everyone's creative methods and certainly will try them. I started frying my taco shells like this a year ago and prefer it. I used to fry the old way which was filling a tortilla with meat then frying. Those are really good but a lot heavier and more fattening being they carry more oil in the meat. This new method the tacos fry up very light, very crunchy, and very addictive. If you over fry them and get them real crunchy, the bottoms crack and everything falls out of the taco so fry but not super hard. A real bonus is that they don't pop oil because there is no meat inside to cause oil to pop-I used to hate that. Get your oil hot but not too hot since the tortillas will fry really fast and burn. Sometimes when I don't feel like fussing with the details of tacos, I throw everything in a bowl, fry up some tortillas that I cut in squares, and have a taco salad-same taste but less work. The downside to frying the shells only is that they are so good you'll want lots of them and so will your family-that means a long time at the stove.

Ranch Dressing II

Reviewed: Nov. 14, 2011
5 FATS PER TABLESPOON and pretty delicious = I modified to 1/4 C. Mayo, 1 C. Sour Cream, 1/4 C. Buttermilk; then I double the rest of the ingredients. Comes out super tasty so you don't need as much being there's so much flavor packed in 2 tablespoons—less mayo means less fat. For a good dressing you don't really need 1 cup of mayo. You can still get the flavor and consistency with 1/4 cup.

Campbell's® Green Bean Casserole

Reviewed: Dec. 22, 2011
Best to use less milk, produces a creamy dish. Also best to use green beans that are cut french style (sliced in thin strips). French-style beans are more delicate in comparison to regular green beans that can be kind of tough and rubbery. Also make sure to thaw frozen green beans and microwave for a little bit to cook some of the water out of them.

Fresh Corn Salsa with Orange and Lime

Reviewed: Jul. 27, 2014
So fresh and tasty. Makes a real pretty presentation for family and guests. I made crispy fried fish tacos, the perfect compliment. Some at it on top of the tacos and some ate in on the side. This is one of the those recipes you never forget and everybody wants it.

Pumpkin Sheet Cake

Reviewed: Nov. 17, 2010
Made this 11/2010. Really moist, super easy to make, but lacked flavor. I think next time I'll make pumpkin bread instead. This was too dull and not very flavorful.
