Cashew Chicken II

Made this for supper tonite. Was really tasty. I always add more soy sauce (I put some on the chicken pieces 5 min before I saute them) so it is a little yummier (ok I love salt and so does hubby) great first recipe of cashew chicken for me.

Grandmother's Buttermilk Cornbread

Buttermilk Pancakes II

Awesome Pancakes. I had a lot of buttermilk left over from another recipe I had made so I thought I would give it a try. They are light and fluffy and he best part is that it made so many pancakes that I froze the left overs in threes for quick breakfas later. They were just as good after being frozen. Great recipe.

Chocolate Sour Cream Fudge

Divinity

I had never made divinty before so I was worried when it stayed sticky for so long that I may have not gotten it hot enough or too much moisture. I let it dry on trays with a light cover over the pans for 3 days and it is a huge hit. So, I may have had it too gooey at first, but the wait was worth it.

Baked Custard

This is a HUGE hit with my husband. He is a desert hound so I am always looking for easy yummy deserts that he will enjoy. It was easy and fast. I did take it out of the oven at 35 minutes and let it sit in the water bath for a few till the water cooled some then took the custard cups out and let them cool. Absolutely creamy and just mel in your mouth yummy!

Country Quiche

I tried this because I had everything at hand and was looking for something a little different for lunch for my husband. I didn't Mozzarella so I put 1/4 cup of grated Parm and I chopped up a small fresh bell pepper to saute with the onions. Then, because my hubby likes his eggs well done I put 1/2 of a small tomato chopped right before I put it in the pie crust to keep some moisture in even though the eggs would be done. It was very tight and tasty, but I would not double, bI would do 1.5 the ingredients because it did not fill the pie shell. Other than that it was a really good lunch and we have enough for a second. We will see how it re-heats! Overall it is a good choice for sure.
