French Butter Cakes (Madeleines)

These cookies taste fantastic however the cooking time needs to be reduced if done at 375. The first time I made them, I baked at the directed time and the cookies came out burned to a crisp! The second time, I reduced to 350 and baked for 10 minutes. The cookies turned out much better that 2nd time and still with the perfect little lump on the back!

Lemon Cream Pasta with Chicken

I've used this recipe with wheat spaghetti a few times and it turns out amazing each time. I usually use minced garlic instead of powder and chicken stock instead of broth. I omit the lemon zest and use a "homemade" version of heavy cream (mixing melted butter and milk with a teaspoon of flour) instead. Excellent citrus recipe for pasta, hands down!!!

Chicken Tikka Masala

This recipe was out of this world good!! After reading the previous reviews, I eliminated all salt (except 1/2 a teaspoon in both the marinade and sauce) and only used one teaspoon of cayenne but then added a few shakes into the sauce. It's worth noting that I am a complete sissy when it comes to spicey food but this dish is flavored perfectly. I made a Sweet Lassi for a beverage to go along with it and it cut the heat of the meal fantastically. I served it family style over brown rice and got positively rave reviews. I can't wait to make this for friends. It's an easy way to show off and make it seem as though you really know your way around a kitchen.

Mama's Asian Chicken and Rice

This dish was outstanding. I cubed the chicken and marinated it in orange juice and tamari for about 45 minutes before cooking it up. I'm not sure if that actually did anything but it was delicious. I also doubled the sauce recipe and added a few shakes of cayenne before adding it to the chicken. This dish is my new "go to" dish for when I really want to WOW company. Its spicy but not overly spicy, just a ton of flavor. Next time, I'll definitely add some vegetables.
