Honey Graham Crackers

Reviewed: Oct. 31, 2010
Pretty good! I was craving for something salty-crunchy and made these. I put in less sugar and a bit more salt. I also added about 1/2 cup of flaxseed for added fiber. Didnt bother to refrigerate and still turned out good. I just pressed everything on a layer of baking sheet and used a blunt knife to cut them into squares before baking.

Amazingly Easy Irish Soda Bread

Reviewed: Oct. 25, 2010
The best part is the crust! I didn't have buttermilk so I used milk and extra butter (next time I'll add vinegar to the milk and make it curdle a bit like someone suggested here). Also, if you brush the crust with butter before baking it gives a really nice buttery crust. Mine was done in 35 mins, but the inside was (very) slightly doughy so I add on 10 mins on low heat. Turned out lovely.

Authentic Louisiana Red Beans and Rice

Reviewed: Aug. 31, 2010
Always wondered how red beans and rice tasted like so I made this, but without a few key ingredients. I didn't have the andouille, so I put in normal chicken sausages with half-cube of chicken bullion. No cajun, but added in the oregano, salt, chili powder and black pepper which is basically the same thing. No cayenne pepper so added extra chili pepper (hot!).

Lentil Soup III

Reviewed: Aug. 30, 2010
Nice, cheap and filling but still needs that umph that is lacking. I ate it with generous squeezes of lime juice. I'd put some chili next time for variety.

Pie Crust I

Reviewed: Aug. 30, 2010
Made it with potato-cheese filling (mashed potatoes, generous amounts of cheese, onion, milk, pepper and salt) and ended up eating the sides before the filling! Nice and flaky, suitable for savory fillings.

Homemade Banana Pudding Pie

Reviewed: Aug. 30, 2010
so, so good. the cream filling compliments the banana perfectly. Didn't have wafer, so I made with pie crust. Next time I think I'll experiment with cinnamon and perhaps sprinkle nuts on top instead of meringue.

Best Ever Muffins

Reviewed: Aug. 20, 2010
I'm an absolute beginner in baking so I loved this recipe. I've made it 3 times now, the first 2 following the recipe word by word until I'm confident enough to alter it. For the 3rd time, I substituted the oil with melted butter and added 1 more egg, and less sugar. The result was so fluffy, it was almost like cake! It's great to read the comments and see the different combination. I made mine with ground flaxseed, chocolate chips and almond flakes topping. Give it a try!
