Colorful Chicken Pesto with Asparagus, Sun Dried Tomatoes and Peppers

I made this after a long day of work when I didn't have a ton of energy left. I followed the recipe (except substituted spaghettini for angel hair) and it was TERRIFIC. It got have reviews from both of us and we are looking forward to finishing off the leftovers at lunch tomorrow.

Tangy Slow Cooker Pork Roast

My husband raved about this. I thought it was good enough to play around with and continue to refine the flavours. The onions were SO good. After reading other peoples' reviews. I omitted the water, substituted indonesian BBQ sauce for the ketchup and thickened the sauce with cornstarch. I didn't find it to have too much vinegar at all. This is an easy weeknight meal which can be served with buttered noodles and a green salad.

Chef John's Perfect Prime Rib

My husband and I bought a 10 pound prime rib for a family dinner. We were nervous about cooking it at such a high heat and then simply turning off the oven and waiting. We decided to try it because we LOVE Chef John's lamb breast recipe. This recipe is just as fantastic. The prime rib was cooked perfectly and the dinner table with ten guests got very quiet as everyone dug in. The dipping sauce was the perfect accompaniment.

Cumin Lamb Steaks with Smashed Potatoes, Wilted Spinach and Red Wine Sauce

this was a terrific meal that we made quickly Sunday night for a family mean and now intend to make on Saturday when we have friends over. The steaks needed a bit more time. The sauce was WONDERFUL. The cumin added a terrific flavour and I can see we'll make this often.

Portuguese Pork with Red Peppers

I had a hard time crushing the peppercorns so it had quite a bite to it. I used both yellow and red peppers and it was very pretty. I will definitely be making this again for the family and maybe even company.

Zucchini Herb Casserole

After reading the other reviews, I cooked the rice in broth, added more herbs and garlic and cut back on the cheese. I used a combination of yellow and green squash and a jalapeno pepper. It was pretty and would make an ok side dish but I served this as a main vegetarian dish and was disappointed. I will likely try this again when the zucchini and tomatoes in the garden are ripe. My husband described it as "pretty and interesting tasting".

Suki's Spinach and Feta Pasta

Yum!! What a bonus that this is quick and many of the ingredients come from the garden. I didn't have enough spinach so I tossed in some arugula and cut down on the pepper. I added more garlic and at the last minute a handful of basil. We were out of penne so I made this with macaroni. I can't wait until the tomatoes in the garden are ripe so that I can use them instead of the store bought. I will be making this frequently.

Zucchini Brownies

I too was VERY sceptical about this recipe. I wasn't going to ice them but frankly they didn't look very good. They look delectable iced and taste wonderful. I left out the walnuts because not everyone likes them. Instead I put 24 walnut pieces on the top to indicate the serving sizes. This will certainly help cope with the bounty of zucchini in the garden. I doubt I'll hear the family complain about this one!!

Slow Cooker Chicken Cacciatore

After reading the other reviews, I made the following adaptations: doubled the garlic, added tomato paste, oregano and rosemary and cut the cooking time to 5 hours. The chicken was tender and the sauce tasty. This was a keeper!

Quinoa Stuffed Pork Tenderloin

I have been wanting to cook with quinoa and this was my first attempt. I thought this would be a good way to get reluctant family members to try it. They all raved about it. Serve with applesauce. Yummy.

Pasta and Salmon Salad

this was a good quick, tasty meal. I had leftover shrimp and smoked salmon and this made a good meal of them. I substituted basil for the tarragon. I would make this again.
