No-Mayonnaise Ranch Dressing

I love this recipe! I didn't have dried chives, but I did have some in the freezer, so I used them instead. So fresh, yummy, and easy-peasy to make!

Easy Chocolate Cupcakes

I'm happy for the 8-year olds who made these cupcakes and loved them. I made these for my 6-year old grandson, and thank goodness he likes them too (they're topped with peanut butter frosting); however, I think they're too dry and the chocolate flavor is too bitter for my taste. If it wasn't for the peanut butter frosting ... probably won't make these again.

Easy Ground Beef Stroganoff

So easy to make, and very tasty! I cut the recipe in half, and it easily fed my hubby, our adult son, and me. The only addition I would suggest is add 1-2 teaspoons of sugar to cut the acidity of the tomato paste. Also, I was out of egg noodles, so I served it over fettuccine noodles instead. YUMMY!

Pancakes II

The pancakes turned okay, but without some adjustments to the recipe. The taste was bland, and despite using my hand mixer to beat the eggs and mix the rest of the ingredients in, the pancakes were not fluffy at all. If I ever make these again, I think I'll increase the sugar to a tablespoon (3 tsp) and possibly add at least 1 teaspoon vanilla extract. I also added some oil to the mix; otherwise, the would have turned out extremely dry.

Old Fashioned Pineapple Upside-Down Cake

This cake tastes good because of the almond extract in it, but it is the consistency of fruit cake--NOT upside down cake. I will never use this recipe again.

Hot Toddy

I used this recipe for a really sore throat, and I used a spicy tea bag along with it. I didn't have a cinnamon stick, so used 1/4 tsp ground cinnamon and left out the lemon. Next time I think I'll use either apple cider or apple juice. I'm happy to report that my sore throat is gone! :)

Fluffy Peanut Butter Frosting

I also give 3 stars for this recipe "as is." I took another reviewer's advice and used 1.25 cups peanut butter (Jif), 1.5 cups of powdered sugar; however, I didn't have cream at home, so I used 2 tbsp 2% milk (lactose free), and it turned out beautifully! I creamed the peanut butter & room temperature butter then added the powdered sugar 1/2 cup at a time, and adding the milk 1 tbsp at at time at the end. It spread very easily on my 9x13 devil's food cake and tasted delicious! Made this way, my family and I give it 5 stars!!!

Creamy Italian Dressing I

This made a wonderful dressing for a pasta salad that I had to make w/very little notice! Next time, I plan on adding grape tomatoes, carrot strips and perhaps some cucumber.

Ham with Pineapple

This recipe was *exactly* what I had hoped it would be: a good old-fashioned baked ham--just like Mom used to make! I served this at Thanksgiving and used the leftovers to make ham & swiss quiches. Thanks for sharing!

Taco Casserole

I used another person's suggestion and used a 16-oz. jar of salsa in place of the canned tomatoes and omitted the onion. The salsa gave it just the right kick! [I also omitted the crushed tortilla chips & green onion.] I just made this again, and didn't have a can of diced tomatoes, so I used diced tomatoes w/chipotle. It was a hit!

Hot Corn

Love this! I've made this a few times over the years for potluck dinnerssince I first stumbled upon it on allrecipes.com. The *only* change I made was using chopped green chiles in place of jalapeno peppers. I always come home with an empty dish! :)
