Cinnamon Pumpkin Waffles

I just made this for dinner after a very busy day and it was AMAZING!!!! We had it with buttermilk syrup which really took this waffle over the top. Soooooo good!! I didn't realize there were so many ingredients, so I tripled the recipe haha, which was a very bad idea because it made a TON of waffles, however I used an entire (smaller) can of pumpkin so there was no waste and I'll be able to freeze the leftovers for later.

Garlic and Herb Marinade

Delicious!! I followed the recipe exactly and it turned out amazing! I could taste the vinegar, but it added something really special to the marinade. My husband says this one is a keeper! Thanks!

Estrellita Salad

Wonderful!!! I've been trying lately to get my children to eat more vegetables. They're so used to the same old stuff, so I when I found this recipe I was so excited to try it. It uses lots of veggies (not just lettuce) and really entices my kids by using cheese and corn chips. Even my husband was impressed. Everyone in my family went back for seconds of this salad. I've never used catalina, but the sweetness of it brings everything together and then constrasts with the chips. So delicous! I can't wait to make this again!

Cream Cheese Frosting II

I hate giving bad reviews, but I'm going to be honest. My guests liked this, but I will be using different measurements next time. I followed the recipe exactly and it ended up being extremely heavy, and thick with the cream cheese. A plus is that it wasn't overly sweet, so I felt I could add another cup of confectioner's sugar, which helped a little. I would suggest using half the cream cheese and maybe more confectioner's sugar. This might be good over cinnamon rolls, or as a dip for cinnamon sticks. I wouldn't suggest anyone use it over cake or cupcakes (what I made) because it was too heavy for the cake. I felt like I was eating a cream cheese pudding actually.

Pumpkin Oatmeal

I have oatmeal for breakfast pretty much every morning and needed something different for fall. This turned out really well. I added a couple tablespoons raisins, and used 1 cup water to 1/2 cup old fashioned oats. There is something different about having the unbaked pumpkin in your oatmeal. I didnt mind so much, as it didnt affect the taste negatively, I think it was a texture issue with me. I still really enjoyed this and will probably make again.

Pumpkin Cheese Bread II

This is my first time making ANY pumpkin bread, and I'm glad I chose this recipe. It's amazing!! I followed the recipe exactly, only, I only had two bread pans that happen to be different sizes so I had to compensate for that, but it still turned out great. I froze 1 loaf because we ate the first loaf within 2 days. It's that good! Thank you Tinafox!

Grandmother's Buttermilk Cornbread

This was really good, but I intended it to have with Chili one night, and it was way too heavy and sweet. We didnt even finish the pan of cornbread because no one wanted it. This would make something really great for breakfast I think.

Simple Ranchy Breaded Fish Fillets

This was super easy! Which I love, but the flavor was a little off. The ranch was overpowering. I might try this again using less Ranch and maybe adding some garlic.
