St. Louis Toasted Ravioli

I used beef ravioli, as did many others. I fried half and baked half. The fried half went over better but we liked both. My 3 kids, and I, loved them. Hubby thought they were just "ok". I made a pretty big batch so I just kept the finished raviolis in a warm oven until we were ready to eat. I'll be making these again soon, I'm sure. Thanks for the recipe!

Quick and Easy Tuna Casserole

Yummy. My 3 young girls have been making this for our family since we found it here several years ago. At the time they were 7, 7 and 5 years old. One is an extremely picky eater but when she gets to cook this she can't seem to get enough. I've even convinced them to add extra peas to the dish. Now the only problem is keeping track of who's turn it is to cook it! :)

Microwave Spiced Nuts

Thank goodness this is an easy recipe!! I made one batch, for guests, and they were gone in no time. Not only did I have to make more...I also had to print out several copies of the recipe! This one is a keeper!

Instant Millionaire Pie for Diabetics

Sooo easy and yummy! Served this to my parents (Dad is diabetic) and Mom just HAD to have the recipe. She has used it a couple times already to take to pot luck dinners! I'm making it again today but don't have vanilla pudding on hand so I'll be using Coconut Cream. I have a feeling it will still be awesome!

Potato Chips

Yep! These chips are easy and yummy. My 3 kids and hubby are eating them as I type this, eagerly waiting on the next batch to finish. I tried what others had recommended and spayed with PAM and it worked great. Mine took about 8-10 minutes. I'm thinking I'll try this with "shoestring" taters too. Thanks for the recipe!

Beer Bread I

Easy! Fast! Yummy! What more can I say? I used "Bud Ice" and it turned out fine. I didn't have the problem that some spoke of concerning the next day. If we've been lucky enough to have any left over for the next day, it's been just fine. I think I'm going to try some suggestions and add some different ingredients next time to flavor the bread differently. Sounds fun! Thanks for the great recipe!

Elbows and Ground Beef

Good. Our family all agreed that we like this dish much better when a jar spagetti sauce is added instead of the tomato sauce. It just seems to add a little more punch to it.

I have made these for many years. I always use a can of tomato soup though. One way to avoid the "crunchy rice" dilema is to use leftover rice (especially from your Chinese take out). I am not fond of these, personally, but the rest of my family loves them.

Apple Enchiladas

OH MY! The 1st bite reminded me of those wonderful carnival elephant ears! The flavor of the butter was just enough to send me to heaven! I served them with vanilla ice cream and I sprinkled a little cinnamon sugar on top all of it. I will add a little less water next time to thicken the sauce a bit. We had "regular" enchiladas for dinner and one of my daughters (6yo) asked me if we were having dessert. I told her, "Yes. Enchiladas." She was soooo bummed until she laid her eyes and taste buds on this! This is a keeper! Thanks for sharing Brenda!

Puppy Chow

This is so yummy and so easy! The kids love making it just as much as eating it! Just use caution with the hot chocolate and peanut butter when making this with the kids! I added a little more powdered sugar. I think I am going to follow someone's recommendation of using milk chocolate next time. That sounds great too!

Peppermint Brittle

This tastes incredible! I use the white and milk or dark chocolate. Some batches I do single chocolates while others I layer and I also try to marble a batch or two. I once bought solid red and green peppermint pieces from a candy making store. They made the finished candy look great but, in my opinion, they weren't as good as the crushed up candy canes or discs and they cost quite a bit more. Everyone thinks I took great effort to make this candy! Ha! What they don't know won't hurt them! LOL Wonderful for gift giving! Great for the winter holidays but hey, treat yourself to this in the summer too! The peppermint is soooo cooling! :o) Yum Yum!

Magic Mango Bread

My mother-in-law loves Mangos but is alergic to the peel, so she can only eat them if someone else does the peeling. I decided to try this bread for her as something different. What a hit! We had a house full of people, the night I was cooking it and they could barely wait for it to come out of the oven! As a matter of fact...one loaf was eaten, completely, right when it came out of the oven! I refused to let anyone touch the 2nd loaf until the next day. My mother-in-law, and everyone else, loved this bread!

Baby Carrots And Brussels Sprouts Glazed With Brown Sugar and Pepper

We Loved this recipe! After reading the other reviews and making this for myself, I've come to this conclusion...When "blanching" your veggies, cook them until the are the tenderness YOU like. I cooked mine quite a bit longer than the recipe called for. When making the sauce, I did NOT add the pepper, at all. I figured that is something that could be added at the table to an individuals liking. If serving to guests, be prepared to share the recipe! This one's a keeper!

Ginger Glazed Mahi Mahi

This was very simple to prepare and yummy! The little ones even liked it! The sauce reminds me of a ginger sauce served at my favorite restaurant! I didn't have balsamic vinegar so I used 1½ tbls of cider vinegar. Also, I didn't have fresh ginger root so I used ½ tsp of ground ginger. I managed to slightly burn mine but it still turned out yummy. I will definitely make this again. I will just start frying at a lower temperature next time. :)

Beer Cheese Dip II

I did mine a little different.....omitted the cream cheese and did the rest of the ingredients in the microwave. I've also tried it using a double boiler (a little more work). Yummy. Tastes just like an appetizer from my favorite "fondue" restaurant.

This was really good. Please do NOT make the mistake I did! Read the recipe!!!!! I failed to notice that the original recipe makes 16 SERVINGS! We're having the 2nd half tonight! ;) Good thing we liked it!! :)

Asparagus Rolantina

This was wonderful!!! A big hit! I used ham instead of prosciutto and I had to add a little more butter than called for. I also followed someones recommendation and boiled the asparagus a little longer. My spears were pencil thin but I think I could have boiled even a little bit longer. Regardless....it was awesome. I will definitly make this again!!!
