Sweet Potato, Carrot, Apple, and Red Lentil Soup
Absolutely delicious and ridiculously easy to throw together. The flavors are complex but still subtle... sweet but slightly smokey, hearty, and just scrumptious on a cold day. I like to puree half the soup... nothing beats the gorgeous orangey gold hue and creamy consistency when it's pureed, but this way I still get some texture.
The past few times I've made this I have bumped up the seasonings a bit, particularly the salt, pepper, chili powder and paprika, but that's purely based on personal preference. The first time I made this, I followed the recipe to a T and it was a huge hit. And so so so good for you.
