Sweet Potato, Carrot, Apple, and Red Lentil Soup
Absolutely delicious and ridiculously easy to throw together. The flavors are complex but still subtle... sweet but slightly smokey, hearty, and just scrumptious on a cold day. I like to puree half the soup... nothing beats the gorgeous orangey gold hue and creamy consistency when it's pureed, but this way I still get some texture. The past few times I've made this I have bumped up the seasonings a bit, particularly the salt, pepper, chili powder and paprika, but that's purely based on personal preference. The first time I made this, I followed the recipe to a T and it was a huge hit. And so so so good for you.

Chicken and Gnocchi Soup
Totally delicious. I seasoned with thyme, a bit of paprika, and two shakes of hot sauce, just to make it a bit more complex. I also cut down on calories by whisking cornstarch into a little skim milk and then adding more skim to taste... my soup thickened beautifully and was perfectly creamy. I've also made this with mini tortellini instead of the gnocchi... it's equally as good. Use a rotisserie chicken, it will send the whole thing over the top!

Greek Lentil Soup (Fakes)
This recipe is perfect. So easy, so quick, so delicious and so good for you. The only thing I do differently is use chicken stock instead of water. And it really is incredible how big of a difference the red wine vinegar makes... I take the soup off the heat and add a few shakes to the whole batch while it's still hot. The flavors instantly come alive.
