Zuppa Toscana

WOW! This was so good. I dont really like the soup at the Olive Garden but my boyfriend has been asking me to make it for the longest time. I found this recipe and thought id try it. I loved it. It wasnt hard to make and it was delicious. I didnt change much except i used spicy sausage and spinich, not smoked sausage and kale. I also added some fresh ground pepper. Mmm, so good. Going to make it again very soon!

Lemon Square Bars

Mmmm! I made these taking the advice of others and cutting down on the butter by 2 tbs and baking the crust 2 min longer. I added a little lemon extract to the custard because i was 2tbs shy of the 5/8c lemon juice and had to sub orange juice. I also baked it a little while longer and covered it with foil halfway through because it browns WAY too fast. I should have used parchment paper because it is kind of hard to get out of the pan. So good though. This was my first time eating or making lemon squares and it was easy and sooo yummy!

Grilled Salmon I

**UPDATE--Made again. Didnt have any brown sugar, only Splenda, but I made this again anyway. Still just as good!!**-- I am giving this recipe 5 stars because it is super easy to make and with ingredients you already have in the house. I dont like my fish, or any meat for that matter, sweet but this was great. It wasnt too sweet. It took me minutes to put together and it was fantastic! I didnt grill it, i made it on the stove and reduced the marinade after and poured it over the salmon when it was done. It was yummy! The only thing id change is use way way less oil, its really not needed. Thanks for an easy and tasty recipe :)

Roasted Cajun Potatoes

Fantastic as is. Make sure you chop your shallots (or onions, which ever you're using) really small, as the first time i made mine, they were a little burnt. This is an excellent recipe and its a go-to when i dont have much on hand. Thank you!

David's Yellow Cake

I am giving this 5 stars because it was so easy to make and with stuff that you would already have on hand...well, except for the cake flour. I didnt have any so i just took 2 tbs out of each cup. Baked up perfectly. The cake isnt overly sweet and hit the spot. It tastes NOTHING like cornbread, who knows what those people were doing. This was perfect for those who want to know exactly what theyre eating. Great recipe!!

Restaurant-Style Zuppa Toscana

I worked at Olive Garden for over 4 years so I know their Zuppa Toscana inside and out. This is the closest recipe I've found. I made this last night and it turned out great. I used hot italian sausage instead of smoked. I rememved it from its casing and cooked it on the stove, ground up. Thats how the soup is at the OG. I also used 4 cups of chicken stock instead of chick soup base because thats what i had on hand. If you add just a pinch or two of red pepper flakes you have yourself the exact soup from The Olive Garden, in my opion. Try it, you wont know the difference!!

Best Big, Fat, Chewy Chocolate Chip Cookie

The best cookie I've ever made! They turned out soft, chewy, and not overly sweet. I didn't have vanilla so I left that out and they still turned out DELICIOUS! Honestly, they taste better than the pillsbury fridge cookies. UPDATE: One cup if choc chips would be perfect. Two is way too much

Simple Sicilian Salad Dressing

I am giving this recipe 5 stars because its easy and you can make it with whats already in your cabinet. Very good, very clean, and very simple. Doesnt get much easier than this. If you like classic, you'll love this!

Mexican Rice II

YAY!! I have finally found the recipe I've been looking for. No more Mexican flavored Rice-A-Roni (sorry kido). This was so easy, cheap, and DELICIOUS! I added more cumin, i cant get enough of that spice, and used chicken bullion instead of broth (cheaper). Its a tad too salty so next time i will use garlic powder instead of garlic salt. I doubled it and Im so glad i did. This is going to make an excellent burrito filler for later this week.

I tripled the tortillas and also layered the beans and meat separately. I wanted it more like a lasagna and less like a casserole. I also added extra spice and peppers to the meat mixture, as i LOVE things spicy. This recipe was so easy and really delicious. No matter what you put in here, you cant go wrong!

Juicy Roasted Chicken

So easy and SOOO good!! I have made this a few times. I brined one (which is supposed to make it even more juicy) and i dont think it really made that much of a difference. This chicken is already super moist. Try it, i promise you wont be let down.

Creamy Hollandaise Sauce

I'm giving this 5 stars because it is EASY and so good! I used salted butter and found it a tad too salty (didn't add the salt the recipe called for). Next time I will use unsalted and salt to taste. A halved recipe easily serves 4 over salmon fillets.

Classic Macaroni Salad

I orginally rated this 2 stars and wanted to throw out the whole bowl. What a mistake that would have been!! The first taste was terrible and FAR too sweet. After letting it sit a few hours it seemed to mellow out and it became DELICIOUS! One of the best mac salads I've ever had. I did cut back on the sugar a bit because that much sugar makes me feel guilty. I absolutly love this recipe and recommend it to everyone....just let it hangout in the fridge a few hours.

Easy Meatloaf

Fantastic! I did cook the onions before adding them to the meat. I don't care for crunchy onions in my meatloaf. I also added a few dashes of worchestier sauce. This meatloaf is better than the onion soup kind I normally make. I did think the ketchup sauce on top was far far too sweet! I think ketchup is sweet enough, the brown sugar isn't necessary at all. Besides that, this meatloaf was perfect

Banana Crumb Muffins

Fantastic! The flavor of these muffins was superb. Very quick and easy to make. Did not change a thing. The crumb topping was far too sweet for my taste, so next time I will add a bit less to each sinfully delicious muffin. Thank you for a great recipe.

Easy Spicy Chicken and Rice

5 stars for something so easy, fast, and when you're in a pinch and don't have much on hand. I read other reviews and so many people added cheese and sour cream THEN said how good it was. I didn't have any of those. I sautéd some onions and garlic, browned the chcken skin, then made as directed. Oh, I seasoned the chicken with Old Bay first. It took EXACTLY 45 min to cook and didn't need extra water like some had said. Very good for those nights you don't have much on hand. Bf said it was very good. He had no idea I literally "threw" it together cuz I had nothing else. Try it...it's great. And I agree, cheese would make it better :)

Clam Sauce with Linguine

Excellent!!!! Followed the recipe exactly and it turned out DELICIOUS! Not only is it dirt cheap, but it's really quick. The only problem I had was 16oz of pasta is far too much. Half ended up in the trash. Next time I will double everything but the pasta, and use half butter, half olive oil. Also, an extra can of whole clams added to the two cans of chopped cans would make it even better. I LOVE this recipe!!

Basil Caesar Salmon

So easy and really good. I did use dill instead of basil and it was fantastic. This does, however, "hide" the fish flavor, so if you're trying to get kids who don't like fish to eat salmon..this is a great recipe.
