Charline's Sweet Potato Casserole

Reviewed: Nov. 26, 2003
I have never eaten or cooked with yams before. My husband asked for sweet potatoes the way his mom used to make them and this was the closest possible recipe i could find. I cubed the potaoes and then steamed them for 20 min before putting them into the oven. The recipe said to "mash" them and that was not going to happen with them being raw. I thought I messed the whole thing up but continued on instead. I cut the butter in half but didnt change anything else. They turned out very good. My husband said they were awsome. I will be keeping this recipe for next year.

Caesar Salad Supreme

Reviewed: Oct. 10, 2003
Wow! This salad dressing is great. So easy to make and one of the best caesar dressings I've ever tasted. I didnt change a thing except I used 2 tsp. of anchovy paste instead of the fillets. It does not need anything to thin it, the consistency was perfect. I will honestly never use botttled caesar dressing again. It had just the right amount of "kick", and the greatest part... I knew exactly what I was eating. Thank you for this great recipe!!

Old-Fashioned Lemonade

Reviewed: Mar. 26, 2003
I did not think this was as good as everyone makes it out to be. The six lemons made about a cup of lemon juice but I dont think that was enough. The drink was very bland and boring. I like lemonade to have more "life", more body. This just tasted like sweetened lemon water, (yes, i know thats what lemonade is)but it was far from good. My four year old daughter loved it, but then again, she loves anything she helps make. Next time i will try another recipe. I hope to have more luck.

Easier Chicken Marsala

Reviewed: Dec. 12, 2002
This was really good and really easy. It was a bit too oily and i even cut the butter in half. I didnt add mushrooms but did add crushed garlic. The smell was incredible. In the end i added about 2 or 3 tbs of heavy cream....Mmmm, I love this dish. I served it with garlic mashed potatoes but next time it will be some sort of pasta. This recipe was easy and definetly worth giving a shot. **UPDATE** I made this again using a different Marsala wine. What a HUGE difference. Make sure you use a good quality wine. I used one that wasnt the greatest and thats exactly how my dish came out. It was ok, but if i had never made it before and didnt know how good it could be, i would never make again.

Zuppa Toscana

Reviewed: Dec. 11, 2002
WOW! This was so good. I dont really like the soup at the Olive Garden but my boyfriend has been asking me to make it for the longest time. I found this recipe and thought id try it. I loved it. It wasnt hard to make and it was delicious. I didnt change much except i used spicy sausage and spinich, not smoked sausage and kale. I also added some fresh ground pepper. Mmm, so good. Going to make it again very soon!

Slow Cooker Taco Soup

Reviewed: Dec. 6, 2002
This was really really good. I did change the recipe a bit though. I made it for my boyfriend who dislikes beans very much so i put in an extra pound of ground serloin. I also used a can of mexican tomatoes and instead of water i added 2 cups of beef broth. I used spicy taco seasoning and the soup was delicious. He loved it. It tasted better than the taco soup we had at Harrahs in Tahoe. I will definetly make this again, maybe next time i will add potatoes.

Brown Family's Favorite Pumpkin Pie

Reviewed: Dec. 4, 2002
This pie was wonderful. It didnt make enough for two 9 inch pies unless each was a bit skimpy, but it was more than just one 9 inch. I loved this pie, it was very very easy. I wouldnt change a thing except chopping the nuts a bit smaller. Overall a delicious pie.

Sugar Cookie Icing

Reviewed: Dec. 18, 2001
It was a bit runny, not good for detailed cookies unless you add more sugar. Love how glossey it dried. If you are going to use vanilla instead of almond extract, i would use the clear and not the brown.

Coconut Macaroons II

Reviewed: Dec. 15, 2001
This made a sticky gooey mess for me also. I know now why they say to use a foil lined baking sheet, if you didnt, it would take forever to clean. I even rolled the cookies into a ball so they would stay together, the milk ran and made the cookies impossible to remove. The taste was great, but its not worth even trying to make again.

Honey Glazed Ham

Reviewed: Dec. 1, 2001
This was really good. Every year i struggle to make a ham as good as the one i made this year for Thanksgiving. We are not a turkey loving family so the ham is very important. I LOVED this ham and so did everyone who tried it. I wont wait for thanksgiving to make this again :)
