Grilled Salmon I

**UPDATE--Made again. Didnt have any brown sugar, only Splenda, but I made this again anyway. Still just as good!!**-- I am giving this recipe 5 stars because it is super easy to make and with ingredients you already have in the house. I dont like my fish, or any meat for that matter, sweet but this was great. It wasnt too sweet. It took me minutes to put together and it was fantastic! I didnt grill it, i made it on the stove and reduced the marinade after and poured it over the salmon when it was done. It was yummy! The only thing id change is use way way less oil, its really not needed. Thanks for an easy and tasty recipe :)

Lemon Square Bars

Mmmm! I made these taking the advice of others and cutting down on the butter by 2 tbs and baking the crust 2 min longer. I added a little lemon extract to the custard because i was 2tbs shy of the 5/8c lemon juice and had to sub orange juice. I also baked it a little while longer and covered it with foil halfway through because it browns WAY too fast. I should have used parchment paper because it is kind of hard to get out of the pan. So good though. This was my first time eating or making lemon squares and it was easy and sooo yummy!

Delicious Baked Chicken Kiev

This recipe was good but not fantastic. I find pounding chicken to be a pain and this recipe wasn't worth it. I did like how it was baked and not fried. I changed a few things. I used plain corn flakes and not sweetened. I also followed others' suggestions and dipped in seasoned flour, egg, then the corn flakes. I wanted a tighter seal. This had very good flavor but it's getting 4 stars because it was a pain :)

Restaurant-Style Buffalo Chicken Wings

YUMMY!! These were wonderful and super easy. I followed the recipe exactly except I made "buffalo bites" instead of wings. I cut up chicken breasts into chunks and fried those. They were great. My 9 yr old daughter fell in love with them. In fact, she ate twice what i ate! I used "FRANKS RED HOT" sauce which was great but next time i will use less butter so its a bit more spicy. I have a feeling i will be making these at least once a week :) Thank you for a great recipe!

Sweet Potato Pecan Pie

I followed this recipe exactly and found the pie a bit watery on the inside. The top was too sweet and the inside not sweet enough. I would not make this pie again. It was very easy, which i liked, but still not worth my time.

Super Al's Cocktail Sauce

Can this get any easier? This was great and I made it in like a minute. I didnt add the brown sugar because I feel ketchup has enough sugar as it is, it didnt need anymore. I love this!!

Chicken Souvlaki Gyro Style

I am only rating the sauce, not the chicken. It was ok but it was a bit bitter. I added a pinch of sugar but that didnt seem to help. I am still searching for the perfect tzatziki sauce, this was not it.

Roasted Pumpkin Seeds

I boiled mine for a few min and let dry for at least 24 hrs. If you decide to let them dry before roasting make sure YOU KEEP AN EYE ON THEM! They roast very fast. So so yummy :)

Southwestern Egg Rolls

These were good, they tasted just like the ones from Chili's, in fact, this is the EXACT recipe for the ones from Chili's. I liked these but not enough to make them often. I didnt add beans but did add extra chicken and corn. I also used wonton skins instead of tortillas. I think tortillas would have been better. Yummy, but not enough to make again for a while.

Fried Mozzarella Cheese Sticks

These were great! I didnt have any cornstarch so i just left it out and they still turned out wonderful. Just like the ones at restaurants and even better than most frozen ones. I double coated them like some suggested and the coating was perfect. Thank you for a SUPER SUPER easy and great recipe!

Rainbow Pasta Salad I

The number of stars totally depends on the dressing you use. Obvioiusly I'd go with a dressing youre familiar with and like. I didnt do much different except add chopped red and orange bell pepper for color and some artichoke hearts (only because i LOVE them). Oh and instead of shredded mozz cheese i used string cheese cut into small rounds. This salad was super easy and really good. Very refreshing.

Irish Cream Bundt Cake

OH MY GOD!!! This cake was so so good. It reminded me of a "Tortuga" rum cake. This cake was gone in one day and there are only three of us here. This is an easy recipe and one of the best cakes ive ever eaten. Id give it 10 stars if I could. The only problem i had was too much icing. Id cut that in half next time. Overall... AWESOME!!

Irresistible Irish Soda Bread

I am only giving this two stars because it was so easy to make and seemed very "authentic". The taste however was awful. My husband said it was really good but its been two days and we still have over half a loaf... obviously he was just being nice.

Spinach Stuffed Chicken Breasts

VERY GOOD! I had to work so i left this recipe for my husband to make.. hes not an experienced cook so i was unsure about eating it when i got home. I shouldnt have been though, it not only looked and smelled wonderful, it tasted AWESOME! I will be making this again very soon. Its so tasty and very "Atkins friendly". Thanks for the wonderful recipe!

Cajun Chicken Pasta

Very easy to make but not as good as everyone makes it out to be. I dont know if it was the Cajun seasoning I used or if it was something else, but I thought the dish was bland. I doubled the seasoning and it still had very little flavor. I didn't add mushrooms but added yellow and orange bell pepper instead. The dish was very easy to make and it fit well for a fast and easy weeknight dinner. I would not recommend it for entertaining.

Grandma's Lemon Meringue Pie

This was a pain in the butt to make but soooo worth it. I think what made it so hard was I didnt have a lemon zester and also I wasnt sure how thick to make the custard. I didnt change anything except I added 1 tsp. of cream of tarter to the egg whites. The pie turned out wonderful and everyone who tried it loved it. I thought it tasted a little gritty but that may just be because I HATE cornstarch. Overall it was a yummy pie.

Charline's Sweet Potato Casserole

I have never eaten or cooked with yams before. My husband asked for sweet potatoes the way his mom used to make them and this was the closest possible recipe i could find. I cubed the potaoes and then steamed them for 20 min before putting them into the oven. The recipe said to "mash" them and that was not going to happen with them being raw. I thought I messed the whole thing up but continued on instead. I cut the butter in half but didnt change anything else. They turned out very good. My husband said they were awsome. I will be keeping this recipe for next year.
