Famous Butter Chicken

Oh to hear my picky, picky boyfriend say "mmmmm" a hundred times during his meal, while eatting 2 full chicken breasts makes me feel really good about cooking :) I had to cut butter & cooking time as suggested by other reviewers (less butter = less calories!). Absolutely wonderful! Loved it the next day for lunch too!

Baked Oatmeal II

Like many others, I have also been looking for a different way to eat my oatmeal for the day. This is so good! To make it low calorie I used a mix of Splenda and Splenda brown (conversions are on the back for recipes). I used unsweetened Vanilla Almond Breeze instead of milk (omitted vanilla extract because of this), egg substitute and unsweetened applesauce instead of butter. I didn't have cranberries so I omitted them all together. Tastes like a soft, bready granola bar and I loved it! Next time I will cut back on the sugar. It was a little too sweet for me for breakfast.

Gumbo Style Chicken Creole

I made this entire recipe for 2 hoping it would turn out great and we could eat the leftovers. I'm so glad I did. My boyfriend, who does not compliment my cooking absolutely raved about this. He says "perfect amount of spice and flavor." He ate it for lunch, dinner and the next day for breakfast. haha. I used dried parsley since thats what I had, splenda in place of sugar, I added a couple dashes of cayenne and 2 extra dashes of hot sauce (we like spicy!). I cooked the chicken with Cajun seasoning (made from a recipe on this site) and I also seasoned the brown rice I served this over with it. I was worried because of other reviews this might be too thick. It was perfect for serving over rice. But I wasn't looking for a soup! This will definitely be a weekly dinner in our kitchen. Id like to try things like shrimp and kielbasa as well. Thanks!

Ed Zieba's Famous Family Pork Chops

I too, read the ingredients and assumed another dry pork chop. Boy was I wrong. These were so tender and juicy. I made it with 4 boneless thin chops (I just prefer these), 2 onions, 2 tablespoons of water. I added green pepper garlic salt and worchestire to the top of the chops. Since I had less and they are smaller chops I baked at 400 degrees for 30 min and 300 degrees for 30 min. I chose to melt a piece of swiss cheese on mine after it was done. It was amazing. Can't wait to eat the leftovers tonight!!

Zucchini Patties

LOVED these. I substituted the 1/2 cup of flour with 1 tablespoon for flour and 1/3 cup italian breadcrumbs as suggest by other users. I used egg beaters instead of eggs, reducted fat parmesean, fat free mozarella and light margarine instead of oil to make it less in calories. Still amazing! Will make quite often. Thanks!!!
