Prosciutto Cups
Instead of mincing the garlic, try grating it. It mixes into the cheese much better. Also, I like the idea of adding Parmesan cheese salt and pepper. I would also mix in a good Gorgonzola cheese as well. It would give it that nice little tang it needs. An easy go to appetizer.

Ham Roll Ups II
This recipe has never failed me. If you want to change it up a bit. try adding pickled asparagus instead of the green onions to the ham roll-ups. It's a nice change. When I make these, I usually do some of each. I've always had compliments. If you cut them into bite sized pieces, you can roll up the whole green onion inside the ham.

Balsamic Roasted Pork Loin
The longer you marinate, the stronger the vinegar taste will be. Just marinate for an hour or two and see if that makes a difference.
