Wonderful Banana Cake

This recipe is THE BOMB! Super easy to make. Followed directions #1 and #2 except I DID preheat the oven and baked according to the package directions (about 25 minutes). Cooled the cake, then made vanilla pudding according to the package directions and folded in a tub of Cool Whip...YUMMERS!

Forever Fresh Cookies

Delicious! Didn't add walnuts and cream of tartar, and used store-brand frosted flake cereal. The cookies did come out crumbly at first, however they "firmed up" to a light, crunchy texture after cooling on a rack. These don't spread while baking, so suggest flattening the dough slightly. I'm not a big coconut fan, however it's a critical part of the recipe, as it adds chewiness and a subtle sweetness. Will make this again for the holidays!

Self-Filled Cupcakes II

These were wonderful! Super rich and yummy. Top with the Whipped Cream Cheese Frosting and they will be a hit - though are very rich/sweet!

Whipped Cream Cream Cheese Frosting

This frosting was the bomb! I am not an experienced baker and used this on cupcakes; at first it come out a bit "gloppy" but after frosting the cakes I popped them in the fridge briefly to "set up." They came out great; can imagine that incorporating the other raters' comments about freezing the mixing paddles would definitely help. Thanks Tom!

Easy and Elegant Pork Tenderloin

Awesome and super easy! This was my very first time cooking a pork tenderloin and I was concerned it would dry out. I defrosted a frozen loin in the microwave, poured the olive oil over the meat and also patted it down with garlic salt and black pepper. Then I threw the meat into a plastic bag filled with store brand Italian style breadcrumbs and did the "shake and bake" coating. Placed the meat on a foil-lined baking sheet and covered with a foil tent to prevent burning/drying out. After I let the meat rest (it cooked faster than I thought), my husband put the tenderloin back in the oven without the foil tent to brown the crust. We served this with mashed potatoes, gravy made from white wine and a can of cream of mushroom soup and peas (I didn't have green beans, which would've been better IMHO). It was a hit, the kids ate it up! Thank you for sharing a great recipe!

Kai Kang Dang (Chicken Curry with Coconut Milk)

Very easy and super tasty. I used light coconut milk and added about a teaspoon more curry paste, and threw in a bag of frozen Asian stir fry vegetables on hand. The one thing I'd adjust the next time is to pull back on the fish sauce as it was too "fishy" for the kids - however a squeeze of fresh lime juice over the curry seemed to neutralize the "fishiness." We ate this with jasmine rice (super easy to make on the stovetop) and I had a beer with my meal. Going to brew a Vietnamese iced coffee with sweetened milk for my nightcap. Yum!
