Coconut Shrimp I

Super delish and this was my first time making any kind of shrimp! i used the sweetened angel flake coconut. Next time i will try to let more batter drain off the shrimp before rolling it in the coconut flakes because some of them were too bready. But overall, pretty crispy and very yummy! I also used frozen large shrimp.

Grilled Garlic Parmesan Zucchini

we cut the zucchini in rounds instead of lengthwise. came out good but the cheese got a little too burned on the top. still tasted great though - would prob lower heat next time.

holy wow!! this was amazing!! i am indian so maybe i'm just used to these spices more than some other people who gave this recipe a lower rating. but wow, this with some homemade yogurt sauce and pita bread, mmmmm so good!

very good way of serving tilapia. i'm sure you can use this on other fish/meats as well. also, you can make the spice rub in advance and just keep it in a sealed container for quick cooking!

i dont add the molasses or extra sugar anymore because hubby thinks it's too sweet. the peaches are more than enough sweetness. we add more habaneros because we looooove the heat!

Schnitzel with a Twist

i used the "greek seasoning recipe" on this site since i didnt have any on hand. the seasoning was great! like the title says, this is not the traditional schnitzel but it's good. the cooking time is way too long if you pound it thin. i would say 5 minutes a side on medium high heat. the cracker crust is good but it does burn a little quick so you gotta def develop a technique. all in all, will make it this again!

wonderful recipe for super moist ribs that fall right off the rack! of course like with any other ribs recipe you must use a bbq sauce you like because that makes or breaks the final outcome!
