Cornbread Muffins I

These muffins were a bit too sweet for my taste. I would cut the sugar down to 1/2 cup next time. Remember to thaw the corn; otherwise, the kernels will be too dry. This recipe will also yield 24 mini-muffins.

Semolina Pudding

Delicious recipe. And I didn't notice any awful smell, as the description warned. I substituted coconut milk for the water and cut down a bit on the sugar to give this recipe a Southeast Asian twist.

I made this for my husband for Hanukkah and he absolutely loved it. I'm usually not a fan of low-fat desserts (if you're going to have dessert, have dessert!), but I made the following substitutions based on what I had and it was still delicious: non-fat cottage cheese, low-fat sour cream, 4 ounces of cream cheese, one less egg, and 4 tablespoons of butter in the kugel, and 2 tablespoons of butter in the topping (which made it more crumbly and easy to sprinkle). With all the dairy and eggs, it didn't lack at all in richness.

Cornmeal Cookies I

This is a fantastic recipe for all ages. My elementary school students love them, and so does my grandmother! They're crunchy and not overly sweet, but still buttery and delicious. I prefer them without the raisins.

Broccoli Potato Bake

I'm a big fan of cheddar cheese, so I substituted 2/3 cup of cheddar for the swiss. I made this twice for guests and it got rave reviews both times. It was a little soupy the first time, so the second time I cut down on the milk by a half cup, and it was still delicious. This could become a signature dish.
