Chicken Puffs

These were meh. I think next time I will use canned or slow-cooked shredded chicken rather than chopped, because the chunks were too chewy. There also wasn't much flavor, although I can see how it would be a good vehicle for almost any seasoning. Will try again another time!

Broiled Pork Chops

Sugar Cookie Icing

Great recipe. Sets up very well, high gloss, good color retention. Definitely will be using again, although I skip the almond extract & use vanilla instead (my family is not a fan of nut flavors).

Sausage Polenta Bake

Great recipe! I made it exactly as written. My husband and son both had seconds! Some helpful hints: 1) add the cornmeal to the boiling water as you whisk, not vice versa, 2) after 20 minutes in the oven, touch the surface of your polenta gently to make sure it's "set"- mine felt like it the surface of a just-baked cheesecake but grittier. The polenta itself has almost zero flavor, but with the sauce baked on top, the sausage juice gets in there and it's delicious! Add more parmesan, or maybe cook the polenta with broth rather than plain water if you want more flavor.

Gazpacho

Well-received at the party I made it for, but I felt like something was missing, perhaps a chili element? I just didn't feel that it had much character. I used fresh tarragon and basil, a little lemon zest as well as the juice, and canned San Marzano tomatoes (since tomato season here ends early). Very refreshing, and would be good for a summer picnic, but not strong enough to stand on its own as a main item.

Smoked Salmon and Egg Salad

I liked this one but ended up doing a bit of variation due to lack of ingredients and being too lazy to go to the grocery store :) I used 3 green onions instead of the red onion, sesame seed, and a little soy sauce. It is delicious. I think this recipe is a great starting point for a lot of great flavor combinations.

Pasta with Tequila-Tomato-Lime Sauce

Flan Mexicano (Mexican Flan)

This recipe is amazing. I made it for a party, and I was asked by no less than 5 people for the recipe! The texture I thought was outstanding, and the flavor, while sweet, is great in small portions. My only criticism is that the custard did not set with 1 hour of cooktime on 350F; I found that increasing the temp to 375F or increasing the time to 75-80 minutes worked for me. Might be just my stove, but I've seen similar notes on other reviews.
