Donut Muffins
I made these donut muffins last night because I had about a half hour to spare and thought my daughter would like some home-made goodies to take to work for her break. I thought I had nutmeg but I didn't so I used some pumpkin pie spice (less than a half teaspoon)and they turned out really good. My daughter tried a couple when they were still warm and gave me her ok. I think it's because she loves anything that has sugar and cinnamon on it. She can be pretty picky about things so her approval of these donut muffins meant they were ok to make again. The recipe said to start off using a large bowl which I did but then I ended up doing a lot of scraping of the bowl to use up the last few little muffin tin spots. Next time, Ii'll use a much smaller bowl. These donut muffins do kind of taste like donut holes and they're a great snack to make when you don't have a lot of time to fuss with a recipe.

Country Breakfast Casserole
I tried this recipe for a brunch last week. I omitted the onions (my daughter doesn't like them)but otherwise followed the recipe and it was great. I followed another reviewers idea and cubed the bread, grated the cheese and browned the sausages the night before so it was really easy to throw together. This is my favourite site for recipes and I always read and value a lot of the reviewers comments before I actually make the recipe.

Blueberry Zucchini Bread
I made this recipe and after reading some of the reviews, I substituted half whole wheat flour and half applesauce for the oil, upped the zucchini to 3 cups and reduced some of the sugar. I baked the batter in two regular sized loaf pans and knew I had to increase the baking time but wasn't sure how much longer to bake the loaves. One reviewer stated 70 minutes and another said to bake them for one hour twenty minutes. I kept checking for doneness and after almost an hour and a half, the tester looked like it was coming out clean and I was afraid the outside of the loaves would start burning if I left them in any longer so I took them out of the oven and let them cool. Mu daughter came up to try some and cut a piece for herself and for me and the centre still seemed kind of doughy although we still ate it and it did taste wonderful. I don't know what went wrong. The batter did seem kind of thin so I'm wondering if there was too much water in the zucchini. I still gave the recipe 5 stars because the bread tasted so good. I'll try it again and this time I'll try to squeeze out as much water as I can out of the zucchini to see if that makes a difference.
