About this Cook
I am a 21 year old Southern small-town country girl who was practically raised in my Grandma's kitchen. She has taught me all of her secrets, as have my Momma and Daddy. They are all wonderful cooks, and I hope to have half of their skill when I am out on my own. I find it difficult to cook to my full potential, because I am a college student who is trying to be somewhat healthy! If I had it my way, it would be the food I was raised on 3 meals a day, 7 days a week! I hope y'all enjoy my page :)
My favorite things to cook
Appetizers!!!! I love making huge amounts of food and inviting people over to come devour them during Cowboys games!
My favorite family cooking traditions
My favorite thing that my Momma and Daddy cook, and some of my favorite memories are from the BBQ pit. Fish fry's are also a family favorite, as well as big pots of chili, stew, or gumbo on cold days.
My cooking triumphs
Hmm... Chicken Spaghetti, my first pot of chili by myself, cooking stew on my own, meatballs, being able to bake anything without ruining it!
My cooking tragedies
Baking of any kind is NOT my specialty!

Chicken In Basil Cream
Made this for supper tonight and it was fantastic with some modifications. We didn't bread the chicken, just cooked with a little bit of evoo and lots of seasoning. Made a roux with flour and the leftover oil in the pan, then added broth, basil, tomatoes and garlic. Used half and half instead of heavy cream. Added lots k extra garlic and put in two big handfuls of fresh baby spinach before adding the chicken back in. It was so so good!!

Alabama Fire Crackers
These are awesome!!!!! Be sure and mix all of the seasonings and oil very well before adding crackers!! They get even better with time!

Beth's Chocolate Chip Cookies
This is the recipe that my grandma uses for chocolate chip cookies and she has given it to me, but of course every time I make them, the recipe has gotten dirtier and dirtier ( I am a messy baker.) Anyways, I have been looking for this recipe EVERYWHERE! It is fabulous. Flatten the cookies a bit before baking, and leave them on the pan for about 10-15 minutes, and they will stay softer longer. I also only bake mine for about 9 minutes. LOVE THEM!
