Chef John's Sunday Pasta Sauce
Very good sauce! Reminded me of the sauce my Northern Italian grandmother and my mother made with deep, rich flavors. I used whatever meat I had on hand, which included pork chops and a small sirloin. I threw in a couple browned Italian sausages toward the end. I browned the meat in the stockpot instead of the oven, though. Removed the browned meat, sweated the onions and garlic in the pot, then deglazed the pot with a little red wine before adding the tomatoes, seasonings, and water and returning the browned meat to the pot. Thank you, Chef John, for reminding me that not all sauces need to have oregano and basil.

Chicken Enchiladas II
I thought these were good but a little bland. If I make them again, I will probably add some cumin or jalapeno, perhaps a little more garlic, sprinkle more green onion on the top and use a red enchilada sauce on top instead of the soup mixture. All in all a good recipe, easy and fast to put together. I would think these would be a hit with young children who don't like spicy food.

Grandma's Onion Rings (Southern Style)
These onion rings are very good! Crispy with just the right amount of light, flakey batter. I've always used the whole egg when making onion rings but the batter comes out heavier and can tend to get soggy. Using just the egg whites makes the batter lighter and still crispy. I have made this recipe using both a deep fryer and a skillet and both turned out equally good. This is now my go-to recipe for onion rings!
