BBQ Pork for Sandwiches

Used a 4lb pork butt, slow-cooked on high for 4 hours, shredded the pork, drained the broth and fat, mixed in BBQ sauce and put back in the slow cooker on low for 1 hour. YUM!

Cornbread Casserole

Perfect on top of chili. I didn't have creamed corn, so I used 2 cans of regular corn, a cup of sour cream, and a touch of milk. Delicious.

Pumpkin Whoopie Pies

Time consuming, but worth it! These were a hit at my Halloween party. I made cream cheese frosting instead of the one in this recipe...perfectly complimented the pumpkin spice flavor of the cookie.

Tacos in Pasta Shells

Creamy Pesto Chicken and Bow Ties

Pretty good. The sauce was a little too thick...will definitely add a little water or extra milk next time. I browned my chicken in olive oil with garlic powder and pepper. I also added 1/2 cup Parmesan cheese and some freshly diced tomatoes to the sauce.

Buffalo Style Chicken Pizza

Pretty good...I'm not a huge fun an of Blue Cheese, so I think I will use Ranch dressing next time. I sautéed cubed chicken with oil and garlic then added the cooked chicken to the hot sauce/butter mixture and let it soak for about 15 minutes before putting it on the pizza. I also added freshly ground pepper to the chicken for a little more flavor. My boyfriend loved it!

Gnocchi with Sage-Butter Sauce

Excellent, melt in your mouth recipe. I used 2 lbs (32 oz) of Gnocchi, and added a little extra of all ingredients. As a main dish, this served 4 people. Next time, I'm going to add diced, cooked butternut squash for a little bit of color and sweetness.

WOW! These are so good. I think the yogurt gives them a great texture. I used one 6 oz serving of Vanilla Yoplait yogurt instead of plain yogurt...delicious.

Banana Crumb Muffins

Best Banana Muffins EVER! I added 1 tsp of Vanilla as suggested by other reviewers, and added the crumb topping 10 minutes into cooking so that the sugar wouldn't melt into the muffin.

Pretty good. I suggest pounding your chicken to even thickness...make sure you don't overcook...40 minutes is way too long in my oven. Maybe 20-30.

BBQ Chicken Pizza II

Better than CPK! I shredded a rotisserie chicken from the grocery store and mixed the chicken with the BBQ sauce before spreading it over the pizza crust. I recommend cooking your pizza dough for a few minutes before adding the toppings so that the crust doesn't get too soggy. Then return to the oven and bake until cheese is melted and pizza is bubbly.

Sweet and Sour Chicken III

So delicious!!! I used a 20 oz can of pineapple tidbits and doubled the amount of brown sugar and vinegar as suggested by other reviewers. I recommend letting the mixture simmer for 10-15 minutes...the chicken becomes very tender and tasty!
