Earthquake Cake II

Great recipe but needed a few tweaks. You definitely have to melt the butter and soften the cream cheese before combining. I also cut the powdered sugar down to 2 cups - it was plenty sweet. I found for ease & a prettier cake it's best to use a bundt pan. When adding the cream cheese mixture I dropped it in large spoonfuls over the chocolate cake batter. I also upped the baking time to around 60 mins. It got rave reviews - my uncle still bakes the cake once a month! I recently made a variation of the cake using a spice cake recipe, minus the coconut, adding a small chopped apple seasoned with cinnamon & a pinch of nutmeg to the cream cheese filling and a sugar glaze drizzled over the top. Perfect for the fall weather!

Slow Cooker Pulled Pork

This was definitely a winner! I did make a couple of changes. I used a boneless pork roast. I made a rub of sea salt, pepper, onion powder and garlic powder that I applied liberally to the pork roast and I marinated it in root beer over night in the fridge. In the morning I took it out of the fridge, let it come to room temperature, poured more root beer in the crock pot (just to cover the meat entirely) and then put it on low. Served it on lightly toasted potato bread rolls. Very good!

Peach Pie the Old Fashioned Two Crust Way

I made this pie for a family gathering because peach is my husband's favorite. He liked it but loved it after it had sat in the fridge for a couple of days. Now I make the filling the day before and let it sit.
