Beef Tenderloin With Roasted Shallots

Chicken Puffs

OMNOMNOM Definitely a yummy appie. I got rid of the butter but added some crumbled bacon. I also used red onion. Instead of using egg white to give it a browner crispier top, I just use some of the Pam Non stick spray. Just a light touch of the spay was perfect.

Slow Drunk Roasted Chicken

Like many others I added fresh herbs (Sage/Rosemary/Thyme) for a bit more flavour. We stuck with the oil as it increases the browning. To stick with an October/Halloween theme we used "Vampire Maple Lager!" It was quite strong to drink but for this chicken it was superb. We will definitely make this one again.

Laura's Quick Slow Cooker Turkey Chili

It was pretty simple and we had it in the pot in 20mins (we were a bit rushed for time.) Instead of Tomato soup we used the diced tomatoes tomato paste but also added cayenne along with brown sugar. Turned out super tasty and easy to freeze/reheat.

Chicken Pot Pie IX

Made it last night and it was tasty but I followed some of the other suggestions as I thought it might be a bit bland (for my tastes) and wanted to avoid it being dry. Cooked the chicken & veggies in chicken broth. Double the sauce. Added poultry seasoning, white pepper (love using white pepper in a white sauce), black pepper and garlic powder. Also added 1 medium cubed russet potatoe.

Greek Lentil Soup (Fakes)

I found it to be a very simple recipe especially if you used canned lentils. I literally had an hour to make it before traveling so the dried lentils aren't an option. For some extra flavour I added chicken stock. Love it with the red wine vinegar! That's what sold me in the first place, being a vinegar fiend. I knew I must like a soup that uses vinegar as a seasoning!

Baked Teriyaki Chicken

I as well used a lower sodium soy. I used Bragg which is not fermented and lower in sodium. Also used brown sugar instead of white. My hubby and 12 year old step daughter loved it. Great base recipe to make your own adjustments.

Carrot Cookies

I didn't follow exact because I knew the cookie lovers in this house wouldn't like them without double the sugar ( I would be fine with it mind you). Following the other reviews I also added 1 cup of quick oats along with 3/4 butter and 1/4 olive oil instead of shortening. I don't know about you but I haven't seen shortening in a household since the 80's. Over all the cookies were liked by everyone after the modifications. My mistake was being impatient and spooning out too much of the batter. The cookies were huge and had to be cooked a bit longer.
