Charleston Shrimp 'n' Gravy

I omitted the bacon. I didn't use chicken stock either. I sautéed the onions and peppers and shrimp, and used the liquid from that to replace the chicken stock. I served this over cheese grits, and everyone loved it and wanted to know how to make. This was a nice delicious meal, that I'll def. be making again one day.

Turkey and Yam Spicy Tacos

I make these often as a quick go-to meal that I can eat on all week. These are great! And taste really good with the addition if cinnamon, and a jar of sweet corn salsa.

Vicki's Hush Puppies

I didn't have self rising flour, so I added 1.25 tsp of baking powder, and 1/2 tsp. of salt. I used regular yellow cornmeal. And I grated a small onion instead of dicing it. The batter did appear dry, so I worked it with my hands and formed the balls that way. The dough was delightfully soft and moist. I didn't change the sugar or anything, and there was no need to add extra seasonings. My family said these were the best hush puppies they've ever had.

High Five Orange Rolls

These were delicious! And a hit! So soft and buttery. I added orange peel and triple sec to the icing, and didn't add milk. I also ended up adding ICBINB spead to the icing because I ran out of butter. Can't wait to make again and add some scrambled eggs, sausage, home fries, and mimosas to the mix.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Everybody loved these! I used store bought dough. I froze over night, and I also rolled the dough in flour so it wouldn't sink.

The Best Lemon Bars

I absolutely oved these!!! I followed another review and added another half recipe for the shortbread to make it a little thicker. And I used a little over 2/3 cup of fresh lemon juice. I like tart lemon tarts and not everybody does so...next time I may jut cut the recipe in half and make in a 8x8 dish.

Award Winning Peaches and Cream Pie

Did not care for this too much. Just was't very good to me. The fillin was too custardy, and Even though I baked it untl the top was a nice golden brown, and seemed done, the filling oozed out as soon as I cut into it. And the crust was more like cake, then an actual pie crust.

Golden Yam Brownies

Absolutely delicious!! I just made these, and I'm trying not to go get another one! Very moist, which I love, but won't stay stiff enough for me to get out of the pan in one piece. I'm going to see if it stays together after it cools all the way. Next time I may add an extra 1/4 of flour. I added 1/2 tsp. of pumpkin pie spice to the batter, and that really rocked it out. I can't wait to make these during the Thanksgiving holidays. I did have to bake it for an extra 8 minutes. The recipe was simple, and the hardest part was grating the sweet potato, because peeling and grating took 10 or 15 minutes.

Chicken Tinga Tostados

Not bad. Good base recipe for chicken. I just wanted a simple chicken taco salad. So I used frozen chicken breasts I had on hand. Petite, zesty canned diced tomatoes in lieue of fresh. Didn't need all of the onions or tomatoes listd in recipe. Spread chicken over shreded lettuce. Topped with cotija cheese and sour cream. Def. add more seasnings to recipe to your liking.

Tilapia Pitas

This was very good! I was surprised, because I don't like feta. But the sauce with the fish is amazing. I used RF mayo, and RF feta to lighten the calories. And I don't usually care for lemon pepper, but that was really good on the fish as well. Def. adding this to my weekly meal rotation. In fact, since I have leftover sauce,I'm making it again tonight!!!
