Egg Custard Pie III

Used store bought crust. Very easy to make. Sprinkled nutmeg on top as well. Held together well when cut.

Beef Burgundy III

Easy Tilapia

Really delicious. Added mushrooms and garlic, Old Bay Seasoning, and olive oil. Thickened sauce with some corn starch. Minused the asparagus and butter. Wow!!! Best fish ever.

Vienna Schnitzel

Not hard to make and my German ancestry wife said it tasted as good as her Auntie's who was from Vienna. Used cake flour and panko bread crumbs but forgot the milk. Fried in olive oil in an electric fry pan. I put lemon juice over mine. Delicious

Parmesan Sage Pork Chops

Excellent. I used thick pork loins. These were tender and moist and surprise surprise the breading stayed on for me. Great flavor. Easy recipe and everyone raved.

Plain Eggless Cake

For an eggless cake, this was great. My friend is allergic to eggs and I wanted to bake a cake and found this recipe. We ate it all. It is a little heavier in texture than a traditional cake and it seemed to have more air bubble holes than a regular cake but the flavor was very good. If you need an eggless cake recipe, this is it.

Almond Chicken Casserole II

I guess I can't call my version almond chicken casserole since I didn't use them because I didn't have them, but what I made based on this recipe has become a favorite. Instead of corn flakes I used Honey Bunches of oats. I used Honey Bunches of Oats with Peaches crushed very fine for the topping. It would probably be even better with the almond version of the cereal.

Best Easy Chicken Croquettes

Really good. Used leftover roasted chicked. Didn't have poultry seasoning so used lemon pepper, some salt, and more pepper. Also used cream of celery since that's what I had. Added shredded white chedder cheese to mixture. Put patties in freezer for about 15 minutes since I was short on time. Then floured and pan fried. Used a white sauce melted with a little more chedder cheese and poured on top of patties. Patties held together and were a hit. Will make again.

Baked Dijon Chicken

Saltine Toffee Cookies

UNBELIEVABLE! Tastes like almond rocha... even though I used pecans. I used the pecan cookie pieces which are ground fairly fine. I was worried that it might stick because I didn't grease the cookie sheet, but I had no trouble. I put them in the freezer for about 30-40 minutes to cool. Then I used a pizza cutter along the sides of the cookie sheet and then used it to cut up the pieces. Some broke, but then it looked more like toffee candy. I couldn't bear to see all those crumbs go to waste when I cut them up, so I mixed the crumbs into vanilla ice cream. Delicious!

Awesome Grilled Cheese Sandwiches

How come I never thought of this? It's so simple! I love grilled cheese sandwiches, but they are such a pain to make. This makes it effortless. Tastes as good as the skillet way...maybe even better.
