Chocolate Chip Banana Bread II

FABULOUS, delicious, wonderful, VERY very moist, LOVE IT !!! You absolutely must try this, but here are just a couple changes I made. Instead of shortening, I used 2 sticks of Blue Bonnet light. I used 2 Tablespoons of Mir.Whip & it was fine. Right before adding the flour mixture, I mixed in 2 tablespoons of vanilla extract, and 2 tablespoons of banana extract ! I added just a little extra walnuts and it was perfect. The banana extract just really helped to top it all off I think. I also used some of the batter to make muffins. My kids both love this, and we can't stop eating it !!!

Satiny Chocolate Glaze

FANTASTIC ! My brother in law can't have any kind of milk what-so-ever. Made him a special cake that he could have, and used this recipe instead of frosting over the top. ( no milk in semi-sweet chips ) Everyone loved it, so yummy !!! I've since made the usual version of choc. cake with this too, and I've come to like it BETTER than frosting !

Sweet and Sour Meatloaf

I was really excited to try this sauce and it was so good ! The actual loaf was just O.K. - I am going to stick with my personal meatloaf recipe but am using this wonderful sauce from now on with it ! I always put in a whole packet of dry onion soup mix in the meat mixture as well as a litle ketchup & garlic salt. But this sauce was so tangy & yummy ! My family liked it too. One thing I forgot -- my usual glaze on top is equal parts honey & ketchup. The second time I made this sauce I added just a little of some kethup/honey mix with it and it was even better ! I just used a small amount to taste though.

Strawberry Trifle

There are just not enough words to describe how delicious and absolutely FABULOUS this dessert is !! It's so light & creamy and all the flavors just blend together perfectly. Make sure you don't use skim milk when making the pudding -- it won't be thick enough & watery instead. I used French Vanilla pudding and it was sooooo good ! Also made mine with fresh strawberries & put a few stawberry & banana slices on the very top for garnish.

Double Layer Pumpkin Cheesecake

FABULOUS!! I put in extra sugar & lots of vanilla, quite a bit extra pumpkin & used pumpkin pie spice for all the spices. It made enough for 2 deep dish pies. (The second one just not as thick) Also used pumpkin that's already ready for pies --not the solid pack pumpkin. This is so good --you won't be sorry if you make it.

Corn Casserole I

YUM YUM YUM !!!! I took this to 2 different christmas dinners and it was a big hit . Even those that were skeptical about the macaroni loved it upon tasting. Will be taking this for all family gatherings from now on !

Yummy Eggnog Pie

this was a huge hit and i have been asked twice for the recipe. the 2nd time i made this i used pumpkin pie spice instead of nutmeg and when i put in the rum i also added a teaspoon of vanilla extract. (the 1st time was a trial run and the 2nd for thanksgiving dinner ) i kept in fridge overnight and until it was time to serve and it got quite runny after a short time sitting on counter. the 2nd time i froze it overnight and transferred to the frige in the morning until time to serve. this was much better ! i really wanted something different and unique and this was excellent ! the only other thing i recommend is that you look up the meaning of fold in a cook book -that helped me the 2nd time. i have been asked to bring this for x-mas as well --- thanks rodney !
