Mexican Rice

I'm reviewing knowing that I made changes and so I want to make note of it so I don't forget. I made 16 servings so I used what the directions said but I added 3 fresh corn off the cob, 2 sm cans of pinto beans, 1 sm can of kidney beans, used veg broth instead of water. One jalapeno. 2 chopped gr peppers, 1.5 onions, tumeric in place of saffron and balsamati rice. Everything was very good and I made it the night before.

Kale Soup

I enjoyed this recipe but I did merge this one and another that was on Allrecipes. The negatives come from one suggesting the Portuguese crushed pepper (messa pimenta?) 3 tablespoons! I put only 2 thinking 3 would be too much. Well 2 was too much. I would suggest using only 1 or none. I don't mind spicy to a point but the heat took over the taste. I also had no idea on prepping the kale. I used fresh. I was told you should use frozen (even by old school women) and when using fresh you need to chop it very very small. I chopped it but not small at all thinking it would render down. The kale was still crunchy and a bit tough. (and yes, I had taken out the middle vein)

Baked Chicken

Very good. I have made something similar using mayonaisse and parm cheese. But this gives it a better taste I think using sour cream and onion soup mix. Everyone loved it. Came out crunchy and very very moist.

Becel® Holiday Butternut Squash with Apple and Cranberries

Not bad. Very quick and easy to make if you buy the squash already cut up. It was good, the only complaint, and this is among teenagers, too, is it was too sweet. So I will cut back next time.

Taco Pie

Very good dish, not clear directions. I used a 7x7 square glass dish. I didn't know if that was too small or large. I used the dough on the bottom and cut strips for the sides of the dish so it would be a pie crust with sides. Instructions didn't say any of this. I added some butter to the rolls before baking, too. I added chunky tomatos with lime juice and cilantro to the hamburger midway thru cooking with the taco seasoning. layered the chips twice. From the canned tomatos, there was alot of juice and I omitted it when I put it in the dish. I should have added some because I would have liked it to be a little more moist, so if you use the tomatoes you can decide. The tomatos came with the lime juice and cilantro btw. I think because I used 2 layers of chips, that also made it a little dry. But it wasn't badly dry. Again, very good, but the directions do leave you asking some questions. I think.

Quinoa and Black Beans

D-lish. It is so easy to make. I made it for myself since I am eating differently from my family and it was enough for 2 days. Of course, it could have been more but I ate really healthy servings. I did use the 2 cans as stated but was concerned when I read the others saying they used one. I am glad I used the 2. I really like the beans so it was fine for me. Great recipe!

Black Bean and Salsa Soup

I loved this. It was so easy and flavorful. The onions weren't mushy but crisp. It reminded me of a dish I grew up with in OK as a kid. Beans and cornbread. Since watching my diet and tryingn to be very selective on my choices, I found this to be a wonderful meal to have on hand when I don't eat the same things I fix my family. (like speg, meatloaf, etc) My husband liked it too. Excellent and I've already bought more ingredients to make more.

Caramelized Baked Chicken

I wish I wasn't saying this, but it was not what I was expecting. I was really thinking it was going to be a sticky carmalized coating. I adjusted the quanities as some had said. I cooked it on the stove to thicken it before pouring over chicken but it never thickened and I cooked it for a loonngggg time. I poured it over and baked and checked on it and the juice that stayed on the top did bake into the chicken but not like it looks in the picture. The taste was ok. The thin sauce gave it moisture and mild taste. IF I make it again, I will cut back to maybe 1/2 cup for the 3/4 that was mentioned.

Cheesy Kielbasa Bake

WHOA! I was surprised. This was a hit at dinner even with my teenage son who doesn't like kielbasa. I was hoping it would be a fave because it is SO simple. I omitted the peas only because my daughter. I also used cream of celery soup because I didn't have cream of mushroom so you could use any creamed soup. You could easily adjust this dish to add hamburger, ham, turkey, whatever kind of meat you have on hand. I made the mixture in a bowl and set it in the refridge ahead of time, the night before, and then all you have to do when you get home from work is pour it in a dish and bake! FINALLY a winner with my family.

Balsamic Chicken

I don't know....I marinaded for about 1.5 hrs. I didn't find it bad. But it was't that tasteful. I had even added some honey to sweeten the acidity cause I knew my kids would be snubbing vinagar. Don't know what I did, but it wasn't a winner with out family.

Simple Pork and Cabbage Skillet

I don't know but my family and I did not care for it. The pork was over done as mentioned in the other comments. There wasn't much taste. I could not wait to try the flavors that had blended but was disappointed. The gravy looked good, but again, didn't have much flavor. The apples were invisible. Must've turned to applesauce. The pork was tender. Maybe I expected it to be like a boiled dinner? That has lots of flavor. Needless to say, it ended up in the trash. Maybe thats why no one has posted a picture.
