Spaghetti Squash I
boy was this goooood! I added squash and zucchini to the mix and the flavor and seasoning was yummy. I added salt and pepper to the tomatoes and when I was cooking the yellow squash and zucchini and with the feta, it just blended. Great vegetarian meal. Husband enjoyed it too. Oh and I was lucky to use what few local farm grown tomatoes are left. I'm sure that made it good too.

Best Ever Pinto Beans
Mine came out too watery. Not sure why. I cooked mine in a crockpot. I'm from OK and remember my mother cooking this. She would use salt pork only. I put raw onions in it and love the taste and crunch. My husband put ketchup in his. I like beans and cornbread. My mother would also sometimes pour the beans on top of the cornbread. That was good, too.

Mexican Rice
I'm reviewing knowing that I made changes and so I want to make note of it so I don't forget. I made 16 servings so I used what the directions said but I added 3 fresh corn off the cob, 2 sm cans of pinto beans, 1 sm can of kidney beans, used veg broth instead of water. One jalapeno. 2 chopped gr peppers, 1.5 onions, tumeric in place of saffron and balsamati rice. Everything was very good and I made it the night before.
