Zucchini Brownies

These are delish. I grew WAY too much zucchini and summer squash in my garden this year, so I brought these brownies in several times to share with my co-workers and they were always a hit. I definitely like them best with the frosting, and I think they're better after they've cooled than when they're warm (for any warm brownies and ice cream lovers out there).

Best-Ever Meatloaf

I LOVE this meatloaf. My only complaint is that there isn't more sauce, but I don't know how I'd make more without opening another can of soup! It's also good with a little bit of worcestershire sauce, or Italian instead of plain bread crumbs.

Double Tomato Bruschetta

This recipe is so tasty! The garlic gives it a pretty good kick. I'd like to try it sometime with roasted garlic instead of raw. It's definitely a go-to appetizer for me.

Honey Duck

We made this recipe for Thanksgiving. I was a little apprehensive as it was the first duck I'd ever cooked & I was afraid I'd screw it up, but it turned out so delicious we ended up destroying the carcass to get at every last little bit of duck meat! My only criticism is that the prep took me more like 45 minutes, so I was a little behind in my cooking schedule.

Amish Breakfast Casserole

I've made this several times and it's turned out great every time. I use a pound of sausage instead of bacon and I think it's great that way. I also use less Swiss and more cheddar (because I'm not a huge fan of Swiss) and it still comes out super tasty. I also usually use a couple more eggs than the recipe calls for, just because I like eggs, but with more eggs or the amount the recipe states, it still tastes great. I did find that I needed to leave it in the oven a while longer at higher elevations.
