I made this over the weekend and brought them into work this morning for a colleague's birthday. They are FABULOUS! I'm getting lots of rave reviews. So moist and yummy. I did add 2 eggs. As soon as I started to mix the sugar, oil and vanilla, I knew it wasn't going to work so I added the eggs and it all came together. And, like everyone said, you don't think it is possible that all the dry ingredients are going to constitute a batter until you add the zucchini - it moistens it all up beautifully. When mixing the frosting, I used a whisk and it blended nicely. This one is a keeper.
