Dark Chocolate Cake II

This cake was FABULOUS!! Very rich and moist ... And still that moist 3 days later! The only item of note is that I used 2% milk as that is what I had on hand at home. Very easy to make. I topped it with a chocolate ganache drizzle. This one is a keeper!

Rum Cake I

This was fantastic .... took it as the birthday cake for a friend and everyone raved over how light and moist it was. I followed the advice of one of the reviewers and combined all the wet ingredients before adding to the dry. I didn't change anything about the glaze, but did sprinkle a little bit of powdered sugar on top. I also made fresh whipped cream, added a little bit of powdered vanilla rum, and served it on the side. It was a nice touch.

Saltine Toffee Cookies

This is fantastic. I tried it for the Christmas holiday and everyone loved it. I ended up making a second batch to get us through the New Year, and then made another batch for my Bunco group. So many people asked for the recipe and I sent this link right to them. A lot of folks were pleased at the fact that the toffee wasn't hard to chew.

Zucchini Brownies

I made this over the weekend and brought them into work this morning for a colleague's birthday. They are FABULOUS! I'm getting lots of rave reviews. So moist and yummy. I did add 2 eggs. As soon as I started to mix the sugar, oil and vanilla, I knew it wasn't going to work so I added the eggs and it all came together. And, like everyone said, you don't think it is possible that all the dry ingredients are going to constitute a batter until you add the zucchini - it moistens it all up beautifully. When mixing the frosting, I used a whisk and it blended nicely. This one is a keeper.
