Delicious Pumpkin Bread

This came out great. I cut the recipe by 2/3 and only made one loaf at a time, but I've now made 2 and we keep eating them so fast, I may make more and freeze them next time. Instead of oil, I went with applesauce as others mentioned and I threw in a couple teaspoons of vanilla. I added 2 tablespoons of flax meal for some extra nutrition, too.

Lamb Chops with Balsamic Reduction

I omitted the butter by accident, so that may have helped temper the vinegar in the sauce. I'll follow more carefully next time. Otherwise, this came out very nicely. Preparing the sauce gives the meat time to rest, which was great. I served it with sauteed eggplant and couscous.

Flax and Sunflower Seed Bread

I substituted all-purpose flour and it came out great. I needed to add a little more all-purpose flour while the machine was kneading. The bread came out fluffy and incredibly tasty.

Japanese Ginger Salad Dressing

Love it! Small changes: 3/4c olive oil, added 1tbsp rice vinegar, ran out of garlic gloves so I used the equivalent in powder and let it it sit in the fridge for an hour before serving. Made a batch of this dressing and watched my boyfriend devour a huge salad.

Amazing Italian Lemon Butter Chicken

This was a huge hit! I made a couple small changes to make it a little bit healthier: omitted the bacon, used skim milk with low-fat butter for the sauce, thickened the sauce with a little cornstarch since I didn't have cream. It came out wonderful!

Cranberry Apple Muffins

Wow. People aren't kidding when they call these moist. Sooo good! I had a bag of cranberries about to go south and way too many apples sitting around, so this recipe was exactly what I needed. The only changes I made were to split the all-purpose flour with whole wheat flour and drop the cooking temp/time to 350 for 20 minutes (actually, about 23 minutes). Prep was longer than 20 minutes with all the shredding (did it by hand), but otherwise a fairly easy recipe. My batch came out to 23 muffins, but I think I added a little bit extra on the carrots and apples.

Sweet and Sour Meatballs

This was so easy for a covered dish Christmas party I attended. The only thing I changed (by mistake) was I added about double the amount of lemon juice, it wasn't noticeable. Next time, I'll use half the onion, though, because it was a little too much for small meatballs.

Hoot-n Holler Baby Back Pork Ribs

Wow. These made me wish I had bought more ribs. I had to slightly alter the recipe and it still came out wonderful. I didn't have any mesquite marinade, but I had mesquite rub, so I added about a tablespoon of that to the water. My timing was off with my family, so the ribs ended up having to sit in the water an extra 30 minutes. I turned off the heat and just let them soak. No problems, they were very tender, but still stayed on the bone so I could move them to the grill. Excellent recipe!

Classic Candied Sweet Potatoes

Very simple and comes out great every time. I ended up having to leave it sit longer than I expected and ut was even better. I think next time I'll plan on letting it sit/simmer for at least 2 hours so the sauce can really work its way into the potatoes.

Peach Muffins

Very tasty. I think next time I may swap out some of the oil for apple sauce like others have mentioned to cut the calories a bit. My batch came out with 22 muffins, but the cooking time was still perfect.
