Rutabaga Salad

Very, very good! And, a great way to use that one last rutabaga from our CSA share. Substituted (sorry) ground pine nuts for the nutritional yeast because I didn't have any (heck, I never even heard of it!) which added a nice creamy element to the dressing. I also used tri-color couscous and added some shredded carrots for color because otherwise the dish is not very appealing. :)

Peach Chicken Salad

Tasty combination of fresh, local ingredients! I didn't have fresh mint and since the local peaches are so sweet and juicy right now, I substituted the sugar and mint for a healthy splash of peppermint schnapps!

Spinach Mushroom Quiche

Great recipe that is easily adaptable to whatever you have on hand. I substituted frozen spinach (thawed), onion soup mix, and cheddar cheese, and added bacon bits for some extra flavor.

Blueberry Pigs

I love the idea, but what a mess! The berries kept rolling out when I tried to roll the crust. Delicious anyway! I'll try again--maybe with a little more patience next time.

Summer Squash Pizza Crust

Flipping the crust is almost impossible. I ended up having to cut it into quarters. The taste was great, the ease of preparation and presentation were not so easy.

Chicken Fiesta Salad

This was incredibly easy and delicious! I didn't use any onion but instead used vidalia onion dressing. Also, served it with Jalapeno Bread II. Better than any restaurant salad!

Chocolate Cherry Biscotti

Very disappointing! After reading the reviews I was excited to try these. The taste was just ok (and I know this because I tested all the pieces that broke as I tried to prepare the cookies), but they were very messy to slice leaving the final product not something that I would put out for company or give to anyone. This recipe is proof that just because something has chocolate in it, doesn't necessarily make it great. Sorry. There are better biscotti recipes out there.

Avocado Quick Bread

I gave this recipe 5 stars not only because it tastes great (much like zucchini bread), but also because it's a terrific way to use those just-about-ready-to-toss avocados! I only had 2 avocados (equivalent to about 1 cup mashed) so I added some applesauce to extend it. Also, in keeping with the "green" theme, I used pistachios and omitted the raisins. Might be fun to make it red and green for Christmas and use dried cherries!

Mother's Applesauce Cake

I made this recipe for Thanksgiving as an alternative dessert for those who don't like pumpkin pie. It was a hit! The frosting is delicious, but very rich. Since the cake itself is pretty sweet, I recommend using half the amount of icing and just drizzling over the cake. Makes a nice presentation too.

Macadamia Nut White Chip Pumpkin Cookies

These cookies are delicious! The dough is very wet, so I didn't attempt to flatten them with a glass. I just pressed them down slightly and sprinkled them with sugar.

Pasta Fagioli Soup II

I've made this over and over...and it always gets great reviews! Also works well in a crock pot set on low--just add the pasta the 1/2 hour or so and turn up to high.
