Roasted Vidalia Onions

Divine! Skipped the salt since the bouillon is salty and didn't wrap in foil...just placed all my onions in a 9x13 baking dish. About 30 minutes in I sliced the onions into fourths and mixed well before popping back in the oven for another 10 minutes. Definite keeper.

Strawberry Cake from Scratch

Made these into cupcakes (24 big ones). Followed the recipe to a T except for separating eggs, beating whites, and folding in at the end. The result, a divine, fluffy, delicious cupcake topped with cream cheese icing and a chocolate dipped strawberry. So ridiculously good.

Asian Beef Noodle Salad

We really enjoyed this...my 1.5 & 2.5 year olds gobbled it up! I did cook the shredded carrots a bit once the beef was browned and let the hot beef mixture wilt the cabbage a bit before serving to make it more kid friendly. Will add some broccoli slaw to the mix next time to up the veggie factor. Served with some homemade gyoza. Definitely going into the regular rotation.

Easy Cajun Jambalaya

I have no idea if this is authentic (how is it I've never tried jambalaya before?!) but it sure is delicious. I added a can of tomatoes as suggested by others. Perfect amount of heat and the texture was great (no issues with pasty/sticky rice; I used jasmine rice). Definitely going into the regular rotation!

Italian Sausage Soup

This soup deserves 10 stars! Delish! Followed recipe to a T except used red chard in place of spinach as I had to use it up. Would be just as good with spinach I am sure. Definitely going into the regular rotation. Also may play with it a bit and add some onion to see what it does. At least I know it's great as written. Thanks for a wonderful (and easy!) recipe!

Skillet Strawberry Pancake

LOVE this recipe. I followed the recipe to a T the first time and give it 5 stars. I have since modified it using coconut oil instead of butter since we don't do much dairy, and I also throw in blueberries in addition to strawberries. I like it with the 3 eggs as it seems almost custardy. I double the recipe and bake it in a 9x13 pan. Any leftovers can be eaten cold straight from the fridge, almost like a dessert. Can't wait to try a savory version as others have suggested (no sugar and cheese added). Very versatile recipe.

Tomato Pie II

Made it as-is and it was DELISH! Didn't have any sogginess issues (thankfully). Next time I think I will add a little bacon and some cooked onions for some added flavor, and will probably sub half of the mayo for sour cream to reduce some of the richness. It really is a great recipe!

White Chocolate Orange Cookies

My new favorite cookie; and translates beautifully to low carb subbing almond flour and coconut flour plus one tsp xanthum gum for all purpose flour and erythritol plus 1tsp liquid stevia for sugars. I also include orange zest and a bit of orange extract. Last night I threw in some craisins which I will do from now on...outstanding!

Yum! Pretty much followed the recipe as-is except for adding a bit of sherry to the cheese sauce and mixing everything together before dumping into a baking dish (rather than layering). I also topped with bread crumbs. Definitely going into the regular rotation.
