Excellent soup! I've made it twice in the past two weeks and both times have been awesome. I use olive oil in place of butter (healthier) and vegetable stock in place of chicken (vegetarian boyfriend). I also use more seasonings, adding fresh minced garlic to the onion about 2 minutes before adding the potatoes, water, and bullion. I use a little cayenne, chili powder, and oregano as well. We like spice! Less cheese and because we don't have a blender or a food processor, I just used the ladel to kind of mash the vegetables in the pot. As other reviewers have noted, it's not necessary to cook the broccoli separately, just add in towards the end, fresh tastes the best! I did put a dollop of sour cream in my bowl upon serving, makes it a little bit creamier but completely not necessary if you're looking to keep the calories down!! Delicious, this will be part of our recipe rotation going forward!!!
