Yellow Squash Casserole
This recipe was a good base idea but I felt it lacked flavor by itself. I sauteed the onions first with some garlic. I also added a little mustard and curry powder to the milk/egg mixture before I poured it over. It gave it a deeper flavor without being over powering.

Homemade Mac and Cheese
This is a great recipe! My boyfriend lamented for days when the leftovers were finished. The only changes I made were to add fresh broccoli in the middle and more seasoning to the cheese sauce. I blanched the broccoli and set aside while I prepared the rest of the meal, I poured half the macaroni in the baking dish, sprinkled a layer of shredded cheddar, then broccoli, another sprinkle of cheddar, the rest of the macaroni, then poured the cheese sauce slowly over the the whole thing. The sauce is thin but it baked up to mix through out. To the cheese sauce I added some cayenne and chili powder, a little salt and pepper and some mustard powder.

Jamie's Minestrone
This is a great start for creating minestrone soup. In typical fashion, I made changes to suit our tastes. I used all vegetable broth instead of water and chicken broth (vegetarian). I used more beans, cannellini and red kidney, the entire can of both, less green beans, more spinach, no zucchini since we forgot to buy, added diced red potatoes, added about 2 extra cups of broth and 1 cup of tomato sauce. It STILL came out quite chunky and delicious. It makes a lot of soup but it only tastes better the next day. Thanks Jamie for a great recipe!
