Artichoke & Spinach Dip Restaurant Style

Reviewed: Nov. 14, 2010
This is delicious! My husband and I had been looking for a great spinach artichoke dip and this definitely fits the bill. We made a few changes to suit our tastes: we used about 6 oz (3/4 package) cream cheese, a little extra mozzarella, and a dash of cayenne pepper. We also used minced garlic straight from the jar for convenience. We just mixed everything together in a bowl, spread it in a dish, and baked. I would suggest stirring it after 30 min of baking to get the cream cheese well distributed (ours was kinda clumped together at first), then popping it back in for a few minutes. So yummy with tortilla chips!

Shrimp Lemon Pepper Linguini

Reviewed: Jan. 17, 2011
Oh man, this is good. As a newlywed on a budget, I used dried basil that we already had and the frozen shrimp that is already peeled with the tails off. Added fresh ground pepper, salt, and lemon zest to taste since some people said it was too peppery for them. Even with my shortcuts, it was still AWESOME! My husband and I made the Red Pepper Biscuits (also on this site) to go with it and it was like Red Lobster date night at home. thanks for the great recipe! :)

Black Magic Cake

Reviewed: Jan. 18, 2011
This is the best chocolate cake I've ever eaten in my life. Followed the recipe exactly, have made once with whipped cream cream cheese frosting (on this site) and once with my mother-in-law's mocha frosting. it's soooo moist and good!

Exquisite Pizza Sauce

Reviewed: Jan. 21, 2011
My husband and I love this pizza sauce. It's yummy, easy, and much cheaper than a jar of store-bought sauce. We do not use the anchovy paste, and we only use about 1/3 of the honey in the recipe since we like a spicier rather than sweeter sauce. We always double it and then freeze the leftovers for the next time we have pizza. Thanks for the great recipe! :)

Boudreaux's Zydeco Stomp Gumbo

Reviewed: Feb. 22, 2011
This is delicious! The only changes we made were omitting the celery (just because we don't like it) and we added the shrimp while the gumbo was cooling for about 15 minutes so as not to overcook it, as another reviewer suggested. Be careful not to burn the roux! We served it with jasmine rice, which was a perfect compliment. Thanks for the great recipe!

Garlic Alfredo Tilapia

Reviewed: Feb. 22, 2011
This was a great, quick recipe. Tilapia is often a sort of boring-tasting fish, but this recipe really livens it up! We decreased the butter since I felt like the alfredo sauce just didn't need much added to it (we used Bertollli) but otherwise kept everything the same. Thanks for sharing!

Red Pepper Biscuits

Reviewed: Jun. 27, 2011
This is a very good recipe! My husband and I love Red Lobster's biscuits, and these are a great way to have them at home. I have made them according to the recipe, but also tried a variation to go with spaghetti when we didn't have Italian bread. I added Italian seasonings (kept the garlic), and substituted mozzarella for the cheddar. I then used olive oil instead of butter. Yum!

Catherine's Spicy Chicken Soup

Reviewed: Jan. 19, 2012
What a flavorful, tasty soup! My husband mentioned how much he liked it about 3 times :) I made a few changes to suit our tastes: I omitted the salt (the bouillon cubes have quite a bit as it is) and the sour cream, just because I didn't feel like they were necessary. I also omitted the onion, just because we're not huge fans of onions. I substituted one can of diced tomatoes for a can of Rotel to give it a kick (and boy it did!) and instead of whole tomatoes I used crushed (I just prefer the texture). I used frozen corn rather than canned (I think it tastes more fresh) and substituted a can of drained, rinsed black beans for one of the cans of chili beans. I made the soup the day before we ate it, so that the flavors could combine and it would be even more delicious. It ended up being quite spicy, but we loved it! Also, just a tip: if you have a Kitchen Aid mixture, use the paddle attachment to shred chicken perfectly! I just added the (hot) chicken breasts to the mixing bowl (no liquid needed) and used the mixer for about 20-30 seconds. Couldn't be easier :)

Rich Mashed Potatoes

Reviewed: Mar. 27, 2012
These were delicious! Reminded me of my mother in law's garlic mashed potatoes that everyone loves, only better (shhh) ;) I stuck to the recipe, other than using onion power and garlic salt rather than onion salt and garlic power (just b/c that's what I had). Added a bit more salt, and mmmm! Hubby loved them. Didn't bake the 1st night, but plan to when I reheat. Thanks for a delicious recipe!

Basic Corn Muffins

Reviewed: Jul. 11, 2011
yummy! these were really good. I added a can of creamed corn and some shredded cheddar cheese to liven them up a bit. I also had to use vegetable oil, since I didn't have any canola oil on hand. very good basic recipe!

Fettuccine with Sweet Pepper-Cayenne Sauce

Reviewed: Jan. 10, 2011
this was ok, but I didn't love it. it was so spicy! I should have cut back on the cayenne pepper. It was fun to try but I probably won't make it again.
