Pasta and Cauliflower

Google found this recipe for me when I had a bunch of leftover cauliflower. As always, I took the advice of previous reviewers and did half cauliflower and half broccoli. I also skipped the garlic powder, but added chilli flakes (3 shakes worth for a halved recipe). I also threw on a bunch of freshly ground pepper and was generous with the parmeasan. Deliciousness ensued! It was a fully satisfying meal with just enough kick. Leftovers heated up well the next day! I will definitely make again! Yum!

Asian Lettuce Wraps

I used this recipe as a base in an attempt to recreate Joey's Grill Chinatown Lettuce Wraps. Instead of beef, I used 2 cut up chicken breasts, EVOO for the oil, fresh ginger, red wine vinegar instead of rice wine, and plain old iceberg lettuce. Definitely add the hot sauce (I used Sriracha, the one with the rooster on it). I also added roasted unsalted cashews and topped with cilantro. Joey's wraps have those crispy noodles but I skipped them. These turned out awesome! I have saved this recipe and will make many times in the future! Thanks Rachel!!

Spicy Garlic Lime Chicken

I have been making this regularly forever now and just realized I haven't reviewed the recipe! It is a standby favourite! I omit the parsley and double the cayenne. As others have suggested, I double the spice mixture, more is better! Instead of garlic powder, I use fresh near the end (1-2 cloves) and add a couple splashes of tequila (at the same time as the lime juice). I also skip the butter all together. As I usually only make one serving at a time, I end up using a whole lime for the juice. I serve it with garlic mashed potatoes. That seems to help offset some of the heat. I love, love, love this recipe! And whenever I make it for others, they rave as well! Satisfying all around! This recipe has been fondly renamed "Tequila Chicken"! Thank you C. Perez!

Ricotta and Spinach Stuffed Manicotti

I just finished having this for dinner with garlic bread on the side! And boy was it good! I failed to buy fresh herbs on my trip to the store, but the dried version was just fine. Also, the store was out of manicotti, so I settled for cannelloni. Due to personal preference, I used original Prego pasta sauce. Thanks to those who suggested using a ziploc bag to fill the pasta and using fresh garlic instead of the powder. Worked like a charm. This recipe is definitely a keeper! Thanks Ernie!

Spicy Indian (Gujarati) Green Beans

I love these green beans! Although I did use a few sub items based on the reviews of others. I used prepared horseradish in place of the mustard seed, EVOO instead of the veg oil, and crushed chiles (the kind you put on pizza). I like to eat the leftovers cold, that is if there are any! Thanks for the recipe Ceeshouse and others!
