Geneva's Ultimate Hungarian Mushroom Soup

I made a few changes to make this a vegan soup. Used 1 1/2 cups soy milk and no sour cream. A tad of Olive Oil instead of butter. A few minor changes too, based on items on hand. Still was great! Will make double next time.

Black Bean, Corn, and Tomato Salad with Feta Cheese

I don't really care for beans or corn, but thought this looked interesting, so tried it. Someone said that they did not find it "amazing", but I totally did! It is truly great. I made my dressing as described, except only used 3/4 cup of oil. Next time I will make it 1/2 cup of oil, and half the lime as well as it is a tad overpowering and a bit oily tasting. Even with those flaws. It is still great. Other changes would be to add a bit more salt, as I think it needs it, and again 1/2 the required dressing.

Chicken Corn Chowder

This was great, I followed the the recipe as well as I could, but used items on hand. I made a gigantic stock pot full of this chowder. I used green peppers instead of shallots (as I had none). I added a cup or two of potato flakes and 2 cups of skim milk instead of cream. Tossed in some extra corn and potatoes, as I made a huge pot. I also added two cans of chicken stock to fill the pot to the top. It turned out great!

Glazed Apple Cream Pie

This makes for a very elegant apple pie. I followed the recipe exactly, except for addding an extra apple (like others have said make sure to slice the apple VERY THIN). I loved it and so did my family. The glaze was just wonderful. This is by far my favorite apple pie and I can't wait to try it again.

Lemon Freeze Pie

This makes a nice little dessert and I imagine would be great for summertime or workplace potlucks. It is a tad sweet, however the lemon juice offsets this somewhat. I substituted most of the lemon juice with lime juice (as I didnt have lemon). I messed up the crust and only added 1/2 the required butter, so the crust on mine was kinda dry and falling off the cake. I give this 5 stars though really feel it's 4 1/2. It's good, but a bit rich! But it is soooo easy. Mine was ready to eat within a couple of hours :)

Apple Crumble Pie

So easy and soooo good. I made a few changes.I added a bit of flour (1-2 tablespoon) to the sugar/cinnamon mixture and then poured this over my apple slices, making sure that they were well coated. I have also made this with a mixture of gala /granny smith apples, along with a tablespoon of lemon juice. Makes for a nice tart flavor.

Jamie's Cranberry Spinach Salad

I thought this was good, but could be better. Like other people suggested, the almonds can be toasted in the oven. I made this salad for my family of 3 and my son didn't want any, my husband only a bit. I had dumped all the dressing onto the salad and mixed it up. All the leftovers were pretty mushy and way over dressed. Next time I will make the dressing and put it in a jar to add individually. I think this can use a lot less dressing, and less calories!

Angela's Awesome Enchiladas

These are absolutely delicious. I've never had Chicken Enchiladas before, however, I think it would be difficult o find any better! My son, who is not much into spicy things, ate 3 of these. He liked them that much. The only change I made was to use a homemade taco seasoning, as I had no package (1/4 teaspoon cayenne pepper, 1 teaspoon each garlic powder, chili powder and onion powder). I think the cayenne added a bit of kick as there was some extra heat in mine. Next time I'll try the Taco seasoning in the package. These are not only delicious, they look really attractive. I am not someone who puts a lot into presentations and usually my meals don't look special. These looked really "pretty" and neat and something that would be good to serve to company :) I will make these often. Next time, I plan on using smaller wraps and making a batch of mini enchiladas (I'm on a diet and a mini one would work).

Grilled Eggplant and Tomato Sandwiches with Romano-Black Pepper Mayonnaise

I did not care for this recipe. I don't get these 5 star reviews. I don't know what went wrong. I really think the veggies need to be cooled and perhaps the sandwich pressed and left to sit for awhile.
