Baked Buffalo Wings

Guests loved them. I followed the directions to pat dry before dredging, leave in the fridge on pan uncovered for an hour, bake 15-20 minutes on each side before brushing with sauce, and then the last 5 minutes or so on broil.

Spicy Sausage and Rice Casserole

He loved it! Used 2 cans diced tomatoes undrained w/out salt, 1.5 cups broth, 16 oz sausage, short grain rice instead of long and that way it only took around 45 mins to cook. And only one large green pepper.

Chocolate Pudding Fudge Cake

Loved it! I did bake it 50 minutes, and the top bit of the cake stuck in the pan and had tons of chocolate chips in it, so maybe it wasn't quite long enough, but it was incredibly moist and went perfectly with vanilla ice cream!

Mini Cheesecakes

These were very good. My guests liked them more than I did. Make sure to use the mini vanilla wafers if you do mini muffin cups - the regular sized ones work, but they take up too much space.

Vegetarian Moroccan Stew

I loved this! If you're having vegans/vegetarians over for dinner and don't know what to serve, don't hesitate to go with this. I visited a friend who was doing just that, and it was perfect. She doesn't like lemon so I think she left the zest out and just squeezed a bit over the cilantro at the end, and served yogurt on the side. I'd leave out the olives but that's personal taste. Served with a salad of butter lettuce, slivered almonds, and pomegranate seeds and bread sticks and followed by a fig-cranberry-honey compote with almond ice cream, regular ice cream, or greek yogurt as preferred. It was a wonderful meal!

Basil, Roasted Peppers and Monterey Jack Cornbread

This was great. Followed it almost exactly, but I did use the Jiffy cornbread mix and make muffins. It doesn't need the extra cheese on top, in my opinion. And it's best served warm out of the oven, just make sure to wait a bit so that they will come out whole from the muffin tins. Heating them up later didn't work quite as well.

Baked Ziti I

I made changes - used ricotta and an egg, used only 13.5 oz whole wheat pasta, used about 1 3/4 jars tomato sauce (26 oz) added 3 cloves crushed garlic to the beef, and sprinkled chopped basil on top. This fit nicely in an 9x13. The fam definitely liked it, but I think my lasagna is worth the extra effort for company.

Spicy Garlic Lime Chicken

He loved it! I approximated all the spices, left out the parsley, and used 1 garlic clove + garlic salt - basically what I could manage from the pantry. And more like 1 1/2 tbsp butter. Served with black beans, brown rice, cilantro, and corn salad.
