Easy Cashew Sea Salt Toffee

Unbelievable! Super simple to make and delicious. I used a glass mixing bowl with a handle and pour spout in the microwave to make the butter/sugar base. The handle and spout made it much easier to pour the liquid on to the cashews. I made several batches and they vairied between 8 and 10 minutes before the mixture turned a tan color. The cashews really make it special and everyone raved about it at Christmas. If only everything could be this simple and fool-proof!

Chocolate Mousse

This was smooth and delicious. After melting the chocolate mixture and letting it cool, I was afraid that it wouldn't incorporate into the whipped cream well. No problem there; the mixture easily blended and the consistency was lovely. This served 4 after I doubled the recipe.

Slow Cooker Pot Roast

If you are a ho-hum pot roast fan, you will love this. If you're a pot roast lover, you will go ape over this recipe. Truly the best pot roast I've ever made. I didn't think it was too salty like other reviewers, although I added several potatoes which I've heard soak up some of the salt. I increased the water to 3/4 cup and added 1/4 cup of wine. Next time I will stick to 1/2 cup water plus the wine..that would be plenty of liquid. I also added baby portabella mushrooms. After about 7 hours, I thickened the juices with a 1 tablespoon of cornstarch mixed with a little cold water and continued to cook a total of 10 hours. Delicious.-can't wait for leftovers.

Saltine Toffee Cookies

Unbelievably good.. Who would have thought it with a saltine crust? Definitely use a jelly roll pan with sides as the butter/sugar sauce continues to bubble in the oven. I used foil to line the pan but will use parchment next time as the foil tore slightly as they were removed. Great for holiday gifts.

Outrageous Chocolate Chip Cookies

Great traditional chocolate chip cookie with a twist. I followed other reviewer's comments and processed the oats slightly in a food processor. I also used chunky peanut butter. Both additions produced a wonderful texture. I chilled the dough before baking (the key to a softer, less flat cookie, in my opinion) and baked for about 13 minutes. I doubled the recipe and made about 40 cookies. A big hit.

Reindeer Food

I've been making this for years to give as gifts. Very fast and inexpensive. I sprinkle a little colored sugar (red and green) on the mixture once it's spread onto the wax paper before it cools completely; gives it a little more festive color.

Chocolate-Covered OREO Cookie Cake

Very easy and very yummy. I followed the recipe exactly and the cake looks fantastic. The chocolate glaze is a little runny so let it sit and cool slightly before pouring over the cake. Spoon it slowly as it will drip down the sides. I always add a little instant coffee granules (1-2 tsp..dissolved in hot water) to any chocolate mix (cake or brownies). The coffee compliments the chocolate well and gives a box mix something extra.

Black Bean Vegetable Soup

This recipe works well in the crock pot. After sautéing the vegetables in a saucepan (I added celery to the recipe) I put everything to the crock as listed and cooked on low for 9 hours. The flavor was delicious and the veggies were very tender but not mushy. A great soup to come home to year round.

Peanut Butter Chip Chocolate Cookies

One of the best cookie recipes I've ever made. I used chocolate chips and M&M's rather than peanut butter chips. They were moist and chewy and delicious. Will try other add-ins next time.

Next-Best-Thing-To-Robert-Redford Pie

Delicious dessert. My kids don't know who Robert Redford is, but after one bite of this pie, they didn't care. I sprinkled crushed Oreos on the top rather than grated chocolate. Wonderful!

Out of this World Turkey Brine

This was an incredible brine. I took other reader's suggestions and brined in the vegetable drawer of the fridge- be careful, it's heavy when filled and the fridge smells of garlic! I brined the turkey for 24 hours, flipping every 6-8 hours as it wasn't completly submerged in the liquid. The turkey was incredibly moist and tender. I cooked it in a roasting bag and the drippings made a wonderful gravy. Will do this every year from now on.

Black Pepper Beef and Cabbage Stir Fry

Delicious dish. Wasn't sure about the ground beef but the texture and flavor were wonderful. I used red and orange peppers and beef broth rather than water. Loved the cabbage. I adjusted the soy sauce amount to taste (used slightly more). The black pepper gave it a kick but I wouldn't recommend cutting the amount. This dish was even better warmed up the next day.

Chicken and Biscuit Casserole

Very good hearty dish. I made this exactly as written and it was wonderful. The veggies were tender and the biscuits were very flavorful. The basil is a nice touch. I added the flour and kneaded the dough as instructed. Very little effort. I will make this again!

Tomato Pie I

I can't imagine anything that would make this dish better than it is. I followed the other reviewer's suggestions- used roma tomatoes, well drained and prebaked the crust. The flavor of the fresh basil and bacon are incredible. This would make a grat brunch dish as it's similiar to a quiche. If my crust was soggy, I certaily didn't notice because I was too busy enjoying the flavors!

Meatball Nirvana

Excellent meatballs for pasta or meatball sandwiches. I followed advise of other reviewers and used half ground beef and half ground pork. Gave the meatballs incredible flavor and texture! I also used the egg instead of the milk and used fresh oregano and basil out of my herb garden. I sauteed them on the stove and finished off in the oven and popped into jar sauce that I kicked up with more fresh herbs for a 30 minute simmer.

Mom's Best Spaghetti Sauce

This will be my new sauce from now on! I followed other reviews and made a few changes. Definately add some wine. I used 1/2 c. White Zin, which is all I had open, but dry white would also be good. I omited the mushrooms (not a fan) and added some oregano. Skipped the parm cheese per suggestion and added more garlic. Making pizza today using it as the sauce.

Chickeny Chickeny Rice

I made this with a few additions and it was delicious. I also made it on the stove top, but added about 1/2 cup of water and more bullion at the end as rice was getting too dry. I also added some frozed peas and carrots and fresh chopped parsley at the end of the cooking. Very good flavor.
