Onigiri - Japanese Rice Balls

Yum! These were really good. We used a rice cooker and put salmon inside instead of fish flakes. Also halved the recipe as suggested by others and still had 8-9 small balls which was plenty. Would definitely recommend this recipe.

Yum! Great recipe! I used regular tri-color carrots and just cut them up in pieces. I also used fresh ginger and they turned out great. We are not huge cooked carrots fans, but these are really good.

The Original Fantasy Fudge

LOVE this recipe! I made 2 batches of it this holiday. I omitted the nuts, added some peppermint oil and some crushed peppermint on top and it was really good. Everyone loved it!

Fresh Apricot Pie

LOVEd this pie! We had a box of apricots from our co op that we needed to use and this was a perfect choice! Was kind of confused about whether to use 1 pie crust or 2.. picture shows no top crust, but instructions say to do a lattice across the top with 2nd crust. I only had one, so I rolled it out thin and did a bit of lattice. I cut back on the sugar a big and loved the tartness of this pie. Serve with fresh whipping cream and it's the best dessert ever!!

Strawberry Jam

Yum! This was my first try with making jam and it was a great success!! I doubled the recipe and used about 5 cups of sugar (decreasing by 1.5 cups per recipe) and it was perfect! Tastes SO fresh and I love that it doesn't have any weird preservatives in it!! Will definitely be making this again.

Zucchini Patties

Oh my! These are SO good! I was looking for a quick recipe to use up some zucchini and came across this one! I shredded it in the food processor and squeezed the water out like others suggested. Also, added some garlic and used an Italian mix of cheeses since that's what I had on had. I dipped each patty in Panko crumbs before frying... YUM!! These were like a fried cheese/fried delicious treat! Will definitely make again.

Fresh Pear Crisp

YUM! This is a wonderful recipe!! I used real butter, as others suggested and also a bit more of it... probably 2 extra Tbsp. We also didn't have ginger, so I left that out, but we served it with fresh whipped cream and my family gobbled it up! I will have to double the recipe next time. SOOO good!!

Eggplant Sandwiches

Wow, these are awesome! So simple, yet so tasty!! The only change we made was to add some minched garlic to the mayo, but everything elese was perfect just as written! I can't wait to make these again!!

Balsamic Chicken

This is a really good recipe!! I pounded out and tenderized the chicken first. I agree with the other poster about not adding the sugar, I think I will try it with less or no sugar next time. I served it with potatoes, but will try rice next time as I thought this had an Asian-type flavor to it. REALLY good!!

Easy Bacon and Cheese Quiche

Yum! This recipe is great!! I used garlic instead of onions, but followed the rest of the recipe exactly. The bacon bits were so easy and adding the swiss and parmesan cheeses gives it a really unique flavor. I will definitely be making this again!

Oven Omelet

This is a great recipe! I used bacon instead of ham and added some garlic and fresh cilantro... it's easy to 1/2 the recipe again and use a 9x13 pan. The eggs were light and fluffy and everyone at my house thought they were great!

Black Bean and Corn Quesadillas

These are SOOO good!! I used corn tortillas and only 1/2 a can of corn and they were really delicious!! I usually have most of these ingrediants on hand, so this is a great quick, easy and cheap dinner!
