Mediterranean Puff Pastry Chicken

I tried this recipe out on my boyfriend who recently started eating meat again. He loved it. The flavors were great too. I did roll the pastry sheets out a bit to be sure that everything fit inside. I also used thin cut chicken breasts but probably would have been fine with regular ones. This is a great recipe that I will definitely make again!

Spinach Quiche

This is delicious. It is definitely the best quiche that I've ever had. I did make some changes. I used half the butter. I also used 3 eggs and 3/4 cups of milk and I still had some left over. I also added some spices in addition to salt and pepper. I bought a deep dish pie crust since some reviewers said it was too much for one pie. It fit perfectly. This was delicious and I will definitely be making it again.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

I love this fish taco recipe. The honey-cumin drizzle was a nice touch. The only change I made was that I used pre-seasoned fish breading. I can tell that I will be making this many, many times in the future.

Homemade Mac and Cheese

This turned out great. I was a little worried that is was too soupy but, it thickened up after baking. My family loved it. There actually weren't any leftovers.

Chicken Tikka Masala

I love chicken tikka masala and I thought this recipe was way too salty. If you follow the directions as stated, you'll end up with 7 teaspoons of salt in your recipe. Needless to say, I followed the recipe to a T and it was way too salty. I'd cut the salt down drastically. Other than the extreme saltiness, the chicken turned out fine. I tasted the chicken before I added it to the sauce and it was delicious!

Honey Mustard Grilled Chicken

This is the first honey mustard sauce that I made. It's delicious! I used it to marinade chicken for kabobs as well as for a baste while grilling. I loved it! The only change I made was to use chili paste instead of steak sauce (didn't have any in the house). I will definitely make it again!
