Chocolate Covered Strawberries

Made these for Valentine's and they were DELICIOUS. Shared with children's teachers and co-workers and received rave reviews. I used semi-sweet morsels and white chocolate morsels for drizzle. I really like the slight "bite" of the semi-sweet morsels. A nice contrast to the juicy, sweet berries. Co-workers said they were better than any they had every bought. YUM!

Texas Sheet Cake V

This is very similar to a recipe I've used for years. Mine uses buttermilk instead of sour cream, and slightly less cocoa. It's a hit everywhere I take it. Feeds a crowd. I prefer to bake it a jellyroll pan rather than regular cake pan. Seems to make a moister cake with just the right cake to frosting combo. A good Southern staple cake.

Easy Pumpkin Muffins

I used a Dark Chocolate Fudge cake mix and the 15 oz can of Pumpkin. Added about 1/2 c. of water and a handful of mini semi-sweet chocolate chips. YUMMY! Very moist and rich - a great treat for my children's lunch boxes. I've used spice cake in the past and it turned out great as well.

Blueberry Lemon Loaf

Very moist bread. Not too sweet. I used fresh berries from my blueberry bush! So good. I would probably double or triple the glaze/icing next time and use a tad more lemon zest in the bread itself. Very nice flavor, I just prefer a little more kick from the lemon.

Jiffy Casserole

Really nice, quick meal. I omitted the oil, and cooked onions with ground beef. I used frozen cubed hash brown potatoes (Southern style). I seasoned the beef with garlic powder and sprinkled seasoning salt on the potatoes as I layered them. Like others suggested, I used milk in the soup instead of the water. Reminds me of a "tater tot" casserole my Mom made. Sprinkled cheddar generously on top just before removing from oven. Kids loved it - hamburger casserole!

I have been making this recipe for years (after having something similar at Olive Garden). Really, really good and EASY. You could cut down on fat by using the dry alfredo mix and making your own (probably doesn't cut down on sodium though). Very yummy!

Pumpkin Butter I

YUMMY! My entire family loves this Pumpkin Butter. Per the suggestion of others I added a half cup of brown sugar to the listed ingredients, but found this to be much too sweet (and I have a sweet tooth). To correct I added another entire 29oz can of pumpkin puree. I then just tasted and added until I got the mixture right for my taste. I used: two cans pumpkin, 1.5 cups apple juice, 1 1/2 c. sugar, and 1 c. brown sugar. I added my spice to taste, which was approximately 2 tsp. pumpkin pie spice, and 2 tsp. cinnamon. This was just right for my taste. Cooked 4-5 hours on low in crockpot. I packaged in 8 oz jelly jars and tied on fall ribbon, made some jar toppers on the computer. Soooo cute! I gave them as teacher gifts and they were very well received. If giving as gifts, make sure you tell the recipient to REFRIGERATE - safety first! This is excellent on bagels with cream cheese, oatmeal, ice cream..... Great, inexpensive gift and taste like FALL! Thanks Eleanor for a super recipe.

Heavenly White Cake

Made this today in the form of cupcakes for DD's birthday. Yummy cake! I took the suggestion of others, and used 1 1/2 cup milk. Made the batter first, then made meringue and FOLDED in. Makes a very fluffy, Heavenly, batter. Great tasting, moist cake. I topped with buttercream frosting. Beats storebought by a long shot. This made 48 cupcakes , filling the cups 1/2 full with batter. Takes a little extra time, but soooo worth it! I am freezing some (minus frosting) for another event. Thanks for the recipe.

Sweet Potato Pie I

I am a true Southerner, and this is a true Sweet Potato Pie. YUMMY! I used evaporated milk instead of reg. I omitted the nutmeg, as I didn't expect my young children to like that flavor. Perfect texture. Don't overcook. Will "set" as it cools. I used three medium sized sweet potatoes that I had baked for another meal. Popped them out of the frig and peeled off the skin, couldn't have been easier. This made 2 regular pies (not deep dish). Thanks for a great fall recipe!

Hot Cocoa Mix in a Jar

Really yummy mix! I added about 2 tsp. cinnamon and used the vanilla creamer. I packaged in a sugar/creamer dispenser from the dollar store and dressed them up for teacher gifts (see my photo). Labeled it "Vanilla-Cinnamon Cocoa Mix for Grown-ups!" My son LOVED this cocoa and I made another batch to have at home. Thanks for the recipe!

Delicious! Just like Mamaw made on Saturday mornings. Be patient, take a while to thicken, but worth the wait. Can't beat it over hot biscuits. A Southern tradition!

Incredibly Cheesy Turkey Meatloaf

Really good. My husband and I are trying to make some healthy lifestyle changes. This delivers that great "comfort food" taste with an improvement in nutrition from the traditional meatloaf. I made it as stated, and my husband is already asking for another!

Spinach and Strawberry Salad

Delicious salad. I prepared this for a dinner party earlier this week and it was a HUGE hit! I took the suggestions of others, and used balsamic vinegar and the dressing was perfect. Thanks for sharing this one! **Update 12/03-I made this again for a Holiday Party and used mandarin oranges and walnuts instead of the strawberries.....soooo good. Everyone loved it and wanted the recipe. You cannot go wrong with this! You can "Healthy it Up" by using EVOO and Splenda, just as good. I don't always use all the dressing. Just enough to taste. Otherwise, it can get a little too soggy.

Easiest Peanut Butter Fudge

Grandma's Apple Dumplings

This is a simple, DELICIOUS recipe. I made it last night, and my family loved it. My 4 year old helped wrap the apples in the crescent rolls and sprinkle the cinnamon on top. This is a good one for children to help with. Thanks for sharing this one!
